1/2 small sweet onion, thinly sliced
Kosher salt and freshly cracked black pepper
1 rolled 9-inch pie crust, store-bought or homemade
1 cup freshly grated sharp Cheddar
1 cup freshly grated mozzarella
1 cup mayonnaise
1/2 cup fresh basil leaves, torn, plus small leaves for garnish

Steps:

  • Arrange the tomato and onion slices in a single layer on a paper towel-lined baking sheet and sprinkle with salt. Let sit for 1 to 2 hours.

1 large egg, lightly beaten
1 tablespoon all-purpose flour
1 large clove garlic, minced

2 pounds heirloom tomatoes
1 pound Roma tomatoes
1 cup diced raw bacon
½ cup sliced leek
2 cups grated white Cheddar cheese
½ cup grated Fontina cheese
½ cup mayonnaise
½ cup fresh basil, torn into small pieces
1 egg
1 tablespoon Dijon mustard
1 pinch salt and ground black pepper to taste

Steps:

  • Chill pie dough for about 1 hour.
