GINGER BEEF ROAST - CROCK POT

Ginger Beef Roast - Crock Pot image

I have no idea where this recipe came from, since I've been using it for years. My picky husband won't eat it, so I only make it a few times a year when I cook at my parents. Browning the meat adds flavor and helps seal in the juices, but if you're short on time, you can skip the browning step. I serve this dish with steamed sugar snap peas and rice. (Stir fry sauce can usually be found in the International:asian section of the grocery store.)

Tips for Making Ginger Beef Roast in a Crock Pot:

- To achieve fall-apart tender beef, select a chuck roast or brisket with good marbling. - Use a combination of soy sauce, brown sugar, ginger, garlic, and sesame oil for a flavorful marinade. - For a bolder ginger flavor, use freshly grated ginger instead of ground ginger. - To add a touch of sweetness, include honey or pineapple juice in the marinade. - Partially freeze the beef roast before slicing to make it easier to cut against the grain. - Sear the beef roast before slow cooking to enhance its flavor and color. - Add vegetables such as carrots, potatoes, and onions to the crock pot for a complete meal. - For a thicker sauce, make a cornstarch slurry and stir it into the cooking liquid towards the end of the cooking time. - Garnish the finished dish with green onions, sesame seeds, or cilantro for added flavor and color.
