Time 30m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds baby red-skinned potatoes
Kosher salt
1 cup fresh parsley
1 scallion, roughly chopped
1 small jalapeno pepper, seeded and roughly chopped
1 clove garlic, smashed
Finely grated zest and juice of 1/2 lemon
1/4 cup extra-virgin olive oil
1 1/4 to 1 1/2 pounds flank steak
Freshly ground pepper

Steps:

  • Put the potatoes in a medium pot and cover with cold water by 1 inch; season with salt. Bring to a boil and cook until fork-tender, 15 to 20 minutes; drain.
  • Meanwhile, combine the parsley, scallion, jalapeno, garlic, lemon zest and juice, 2 tablespoons olive oil and 1/2 teaspoon salt in a mini food processor; pulse until finely chopped. Transfer to a small bowl and set aside.
  • Heat a large skillet over high heat and add 1 tablespoon olive oil. Season the steak with salt and pepper. Add to the skillet and cook until browned, 5 to 6 minutes per side for medium rare. Transfer to a cutting board and let rest 5 minutes.
  • Add the remaining 1 tablespoon olive oil and the potatoes to the same skillet; gently smash the potatoes with the back of a wooden spoon. Cook, stirring occasionally, until golden brown and slightly crisp, about 5 minutes. Season with salt and pepper.
  • Thinly slice the steak against the grain. Top with the parsley sauce and serve with the potatoes.

These potatoes are slightly green, slightly spicy, and beautifully fragrant with roasted garlic. Good compliment to meat and fish cooked with ginger - soy marinades. The leftovers make great potato pancakes!

SOY GINGER FLANK STEAK WITH GARLIC

Soy Ginger Flank Steak With Garlic image

This recipe is delicious and easy. I make this quite often. I got it out of a local TV station cookbook called "KCTS Cooks" (on the grill).Serve with asparagus, baby red potatoes, corn on the cob, or any other summer vegetable. Cooking time does not include marinating.

Categories     Steak

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 5

1/3 cup soy sauce
1/3 cup honey
1 tablespoon minced garlic
1 tablespoon grated gingerroot
1 -2 lb flank steak

Steps:

  • Lay flank steak flat and, with a sharp knife, score deep cuts diagonally at one-inch intervals across the entire steak.
  • Repeat at a 90-degree angle to create one-inch squares across the surface of the steak.
  • Repeat on other side of meat.
  • Combine soy sauce and honey in a small glass bowl.
  • Whisk until blended.
  • Stir in garlic and ginger.
  • Place steak in 13X9-inch pan.
  • Pour marinade over meat, and turn to fully coat.
  • Cover pan with lid or foil and store in refrigerator overnight.
  • Turn steak at least once while marinating.
  • Grill 3 to 5 minutes on each side, or until desired temperature is reached.
  • Do not overcook.
  • Steak should be pink in the middle.
  • The ends will be on the well done side for those who prefer it.
  • Slice meat thinly at an angle.
  • Note: You can make an extra batch of sauce to save and serve warm at the table for pouring on top of the meat.

Tips:

  • For the best results, use flank steak that is at least 1 inch thick. This will ensure that the steak cooks evenly and stays juicy.
  • To make sure the steak is cooked to your liking, use a meat thermometer to check the internal temperature. For medium-rare steak, cook to an internal temperature of 135 degrees Fahrenheit.
  • If you don't have wasabi powder, you can use prepared wasabi paste. Just be sure to use it sparingly, as it can be very spicy.
  • If you don't have Yukon Gold potatoes, you can use another type of starchy potato, such as Russet potatoes or red potatoes.
  • To make sure the smashed potatoes are crispy, be sure to smash them flat before baking them.
  • For a more flavorful steak, marinate it in the ginger-soy sauce for at least 30 minutes before cooking.
  • If you don't have time to marinate the steak, you can still make this recipe. Just be sure to cook the steak for a shorter amount of time, so that it doesn't become tough.

Conclusion:

This ginger flank steak with wasabi-smashed potatoes is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The steak is tender and flavorful, and the potatoes are crispy and addictive. With just a few simple ingredients, you can create a meal that your family and friends will love. So next time you're looking for a quick and easy recipe, give this one a try. You won't be disappointed!
