Steps:
- Mix together dry ingredients. (You can do this the night before).
- In a separate bowl, mix the wet ingredients and brown sugar then add to the dry, mixing until just moist, folding in pecans and cranberries.
- If using cranberries, prepare as follows: Thaw if frozen. Cut in halves and place in bowl with sprinkle of white sugar. Toss in sugar then fold into pancake batter with pecans. (This cuts the tartness).
- Let stand for five minutes **Don't skip this step.
- Heat GREASED griddle to 350 while the pancake batter is standing.
- Pour pancake batter onto griddle, and lightly spread outwards with a spatchula. Due to the molasses, this batter can thicken quite a bit.
- Flip when bubbles form on top of pancake and edges are dry. Enjoy with maple syrup, caramel sauce, pear sauce, or applesauce.
CHRISTMAS GINGERBREAD PANCAKES
Wonderful for a Christmas morning brunch, don't wait until the holidays to make these they are wonderful at anytime ---adjust the amount of sugar to suit taste, I strongly suggest for this and for any pancake recipe to allow the batter to sit in the refrigerator for at least a few hours this will improve the texture of the pancakes --- these are wonderful served with orange marmalade :)

GINGERBREAD PANCAKES WITH CREAM CHEESE AND RUM SAUCE

Steps:
- Preheat the oven to 200 degrees F. Line a baking sheet with two kitchen towels stacked on top of each other and place in the oven. This will keep your cooked pancakes warm.
- For the pancakes: Whisk the flour, 1/4 cup plus 2 tablespoons of the sugar, the cornstarch, baking powder, ginger, cinnamon, cloves, baking soda and 1/4 teaspoon of the salt together in a large bowl. Whisk 1 1/4 cups of the milk, the molasses, melted butter, 1/2 teaspoon of the vanilla and the eggs together in a medium bowl. Add the milk mixture to the flour mixture and stir until batter is thick and ingredients are just incorporated (it's okay if there are some lumps). Let the batter rest for 5 minutes.
- Meanwhile, make the cream cheese sauce: Combine the remaining 1/4 cup plus 2 tablespoons sugar, 1/4 teaspoon salt, 3/4 cup milk and 1/2 teaspoon vanilla with the cream cheese and rum in a small saucepan over medium heat, whisking until the cream cheese melts completely and mixture just begins to simmer, about 2 minutes. Remove the sauce from the heat and keep warm.
- Heat a large nonstick skillet over medium heat. Use 1 heaping tablespoon of the batter per pancake, making enough to just fill the skillet without crowding. Cook until pancakes are golden on the bottom and bubbly on top, about 30 seconds. Flip the pancakes and cook until lightly golden on the bottom, about 30 seconds more. Transfer the pancakes to the baking sheet in the oven, tucking them between the kitchen towels. Repeat with the remaining batter.
- When ready to serve, divide the pancakes between four serving plates, dust with confectioners' sugar and drizzle with the cream cheese sauce. Serve immediately with extra sauce on the side.
QUICK & EASY GINGERBREAD PANCAKES
Steps:
- Combine the Krusteaz with the spices and sugar- you can really just wing it on quantities... it's not much different than making box-mix pancakes- mix together thoroughly. Open the can of ginger ale, add in splashes, then mix, until you have about cake batter consistency. (This will both fluff up and thicken- you can add more liquid if it becomes hard to work with.) Heat cast iron skillet or griddle to about medium. A spritz of cooking spray between each batch helps to keep the pan from drying out and the cakes sticking...) Pour or ladle about a half a cup of the batter onto the heated skillet, and allow to cook until edges are slightly dry. (It may be too thick for the traditional pancake bubble-test...) flip cake with a spatula, and allow to cook for another 30 seconds to 1 minute, then flip out onto a waiting plate or platter. For the syrup, I simply blended one part molasses, one part regular butter syrup, and a tiny splash of the remaining ginger ale- the molasses's rich smokey flavor is what really makes these reminiscent of strong, sweet gingerbread!

Steps:
- Preheat the oven to 250 degrees F.
- In a large bowl, combine the flour, gingerbread cookie crumbs, baking powder, pumpkin pie spice and salt.
- In a separate medium bowl, whisk together the brown sugar and eggs until foamy and light, then whisk in the milk, melted butter and molasses. Stir the wet ingredients into the dry until just incorporated.
- Heat a nonstick skillet or griddle over medium-high heat. Add a pat of butter and swirl to melt. When the butter is sizzling, ladle 1/4 cup batter into the center of the pan. Cook on one side until bubbles form and pop and the surface near the edges looks dry. Flip and cook for about 1 minute more on the second side. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining batter.
- Serve warm with maple syrup and/or whipped cream.
Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor of your pancakes.
- Make sure your griddle or pan is hot enough before you start cooking. This will help the pancakes cook evenly and prevent them from sticking.
- Don't overcrowd the griddle or pan. Leave some space between each pancake so they have room to cook.
- Cook the pancakes over medium heat. This will help them cook through without burning.
- Flip the pancakes only once. Flipping them too often will make them tough.
- Serve the pancakes immediately with your favorite toppings. They're best when they're hot and fresh.
Conclusion:
Gingerbread pancakes are a delicious and festive treat that are perfect for a holiday breakfast or brunch. They're easy to make and can be customized with your favorite toppings. So next time you're looking for a special breakfast recipe, give gingerbread pancakes a try. You won't be disappointed!
