Steps:

  • Heat all ingredients to boiling in 3-quart saucepan or 4-quart Dutch oven, stirring occasionally; reduce heat. Cover and simmer 30 minutes.
  • Uncover and simmer about 15 minutes, stirring occasionally, until mixture is very thick. Cool about 2 hours. Cover and refrigerate up to 2 weeks, or freeze up to 2 months.

1 cup prepared chopped mango (available in the prepared produce fruit section)
1 pinch salt

  • Pop the mango, while still in the container, into the freezer for at least 2 hours.
  • While the mango is freezing, wash the mason jar and lid thoroughly.
  • In a small saucepan, over medium-low heat, add ginger preserves and cayenne pepper. Once the preserves begin to boil, turn off the heat and pull saucepan off to the side. Stir in frozen mango and salt. When the chutney is at room temperature, pour it into the jar and cover with a lid. Place in refrigerator.

1 teaspoon fennel seeds
1 medium red onion, thinly sliced
1 teaspoon store-bought or homemade garam masala, recipe follows
1/4 to 1/2 teaspoon cayenne pepper
1 pound green apples, cored and diced into 1/2-inch cubes
1 (6-inch thumb) fresh ginger, peeled, sliced into thin planks, then sliced again into thin matchsticks (about 1/2 cup)
1/2 cup sugar
2 tablespoons apple cider vinegar
Kosher salt and freshly ground black pepper
3 large cinnamon sticks (if you have the kind you get at Indian stores, it's about 3 tablespoons of cinnamon bark bits)
3 tablespoons whole cloves
1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional

Steps:

  • Warm the canola oil in a medium pot over medium-high heat. When shimmering, add the cumin seeds and fennel seeds-they should sizzle upon contact. If they don't, turn the heat up a little. Cook about 30 seconds.
  • Add the onions and cook, stirring often, until the onions turn golden, about 10 minutes.
  • Now add the garam masala and cayenne pepper; cook, stirring vigorously for about 30 seconds.
  • Add the apples, ginger, sugar, apple cider vinegar, 2 teaspoons of salt and a generous amount of freshly ground pepper; stir and cook until the sugar melts. Keep cooking, stirring often, until the sugar thickens and caramelizes, and the apples soften, about 15 minutes.
  • Taste for seasonings and serve.
  • Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using, into a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

A delightful apple chutney with the added kick of ginger. I make this every autumn when I harvest my apples from the garden - you can use windfall apples too. Chutney is such an interesting preserve as it combines sweet and savoury flavours, making it an ideal accompaniment for a range of dishes such as cold meats, salami, ham, pasties, pies and is essential in a traditional Ploughman's Lunch! I also add chutney to my curries, tagines and winter stews. The word chutney is derived from the Hindu word "chatni" meaning strongly spiced. Try to use good cooking apples with plenty of flavour and taste for the best results. This is based on a family recipe and is a mellow and mild type of chutney.

1 lb onion, weight is for onions when peeled and finely chopped
2 lbs cooking apples, weight is for apples when peeled, cored and roughly chopped
4 ounces sultanas
1 ounce fresh gingerroot, grated
1 teaspoon dried ginger powder
2 teaspoons mixed spice
1 lb soft brown sugar
1/2 pint malt vinegar
1/2 pint cider apple cider vinegar
1/2-1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place all the prepared onions and apples into a large preserving pan and add the remaining ingredients.
  • Bring slowly to the boil and then lower the heat so that chutney cooks at a rolling boil.
  • Stir the chutney regularly and make sure it does not "catch" and burn on the base of the preserving pan.
  • Keep on cooking until the chutney is the consistency of a thick jam and all the liquids have dissolved.
  • (A trick to check if it is cooked is to draw your wooden spoon across the chutney, if the space that is left fills up with liquid, the chutney is not ready yet!).
  • Spoon the hot chutney into hot and sterile jars and seal immediately.
  • Makes about 4 lbs chutney.
  • Store in a dark and cool place and leave to mature for at least 2 weeks.

1/2 medium lime
5 whole cloves

  • In a large saucepan, bring 4 cups water to a boil. Add lime; cover and boil for 2 minutes. Drain and immediately place lime in ice water. Discard lime seeds; finely chop lime with peel and set aside. Place cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag., In a saucepan, combine the brown sugar, preserves, vinegar, ginger, curry, cinnamon and remaining water. Add spice bag. Bring to a boil over medium heat, stirring constantly. Add the pear, apple and reserved lime; return to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Add cranberries and raisins. Simmer, uncovered, for 20-25 minutes until the berries pop and mixture is thickened. Discard spice bag. Stir in walnuts. Cool. Cover and refrigerate until serving.

The fruit and vegetable chopping is time-consuming, but important. Whizzing everything up in a food processor would give a very different, sloppy-textured result.

Yield makes twelve to thirteen 8-ounce jars

12 cloves
2 teaspoons black peppercorns
1 teaspoon coriander seeds
2 1/4 pounds summer squash, peeled (if need be) and diced
2 1/4 pounds green tomatoes or tomatillos, peeled and diced
1 pound, 2 ounces cooking apples, peeled, cored, and diced
1 pound, 2 ounces onions, peeled and diced.
3 cups golden raisins
2 1/2 cups light brown sugar
2 1/2 cups cider vinegar or white wine vinegar

For the spice bag
2 teaspoons yellow mustard seeds

Steps:

  • Make your spice bag by tying up the spices in an 8-inch square of cheesecloth. Put this into a preserving pan with all the other ingredients and bring slowly to a boil, stirring occasionally. This will take awhile, as there will be lots in the pan, but don't hurry it.
  • Let the mixture simmer, uncovered, for 2 1/2 to 3 hours - maybe even a bit more. You do not have to hover, hawk-eyed, over the pan, but do keep an eye on it and stir regularly to ensure it doesn't burn. It's ready when it is glossy, thick, rich in color and well reduced - but with the chunks of fruit and vegetables still clearly discernible. It is thick enough if, when you draw a wooden spoon through it, the chutney parts to reveal the bottom of the pan for a few seconds.
  • Pot the chutney while warm in sterilized jars (see p. 21). Pack down with the back of a spoon to remove any air pockets. Seal with vinegar-proof lids (see p. 22). Store in a cool, dark place for a couple of months to mature before using. Use within 2 years.
  • For each variation, use 2 1/2 cups of light brown sugar, 2 1/2 cups of cider vinegar or white wine vinegar, a pinch of salt, and 2 teaspoons of dried chile flakes (if using) and follow the basic method.

1 jalapeno, seeded and slivered
1 1/2 cups sugar
3/4 cup cider vinegar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon curry powder, preferably Madras
1 pinch salt
1/4 teaspoon cayenne pepper (or to taste)
2 tablespoons minced crystallized ginger

Steps:

  • Combine the first 12 ingredients in a slow cooker.
  • Cover and cook on HIGH for 4 to 4 1/2 hours or until the chutney reaches a jam-like consistency.
  • Remove lid and let mixture cook on HIGH an additional 30 minutes to evaporate excess juice and thicken, if necessary.
  • Stir in crystalized ginger.

1 cup dates, chopped
