2 teaspoons baking soda
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
Pinch kosher salt
3/4 cup (1 1/2 sticks) butter, softened
1/4 cup granulated sugar
1/4 cup real maple syrup
1/4 cup molasses
1 large egg
1/4 cup store-bought honey-pear shrub (see Cook's Note)
3 cups heavy whipping cream, cold
3 tablespoons confectioners' sugar
1 cup mascarpone cheese, softened

Steps:

  • Preheat the oven to 350 degrees F. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon and salt.

1 1/4 cups lukewarm water
1 egg
2 cans (15 oz each) sliced pears
1 can (15.75 oz) lemon pie filling
2 cups whipping cream
