Glorious Baked Cheese Cauliflower image

Kelly calls this glorious baked cauliflower. Glorious it is!! Super creamy and cheesy. I put a little Parmesan cheese in the topping for a little extra zing but it would be just as delish without it!!

Provided by Kelly Williams @WildfloursCottageKitchen

Categories     Vegetables

Number Of Ingredients 15

1 large head of cauliflower, cut into floweretes
SAUCE:
4 tablespoon(s) butter (1/2 a stick)
1/4 cup(s) all-purpose flour
1/2 teaspoon(s) salt
1/8 teaspoon(s) pepper
2 cup(s) milk
1/2-1 tablespoon(s) regular or Dijon mustard, to taste
1 1/2 cup(s) extra sharp cheddar cheese, grated (6 oz. block)
TOPPING:
1 cup(s) soft fresh bread crumbs
1 tablespoon(s) fresh chopped parsley
1/2 teaspoon(s) paprika
2 tablespoon(s) melted butter
pinch(es) salt

Steps:

  • Boil or steam cauliflower in water until just tender, about 6 to 8 minutes. Drain and set aside.
  • Grease a 2-quart baking dish. Heat oven to 350°.
  • In a medium saucepan, heat butter over medium heat. Add flour. Stir until smooth and just bubbly.
  • Add salt, pepper, and milk. Cook the sauce, stirring, until thickened and bubbly.
  • Add the mustard and cheese and continue cooking, stirring, until cheese is melted.
  • Combine the cauliflower with sauce. Spoon into the prepared baking dish.
  • Combine topping ingredients and sprinkle over the cauliflower mixture.
  • Bake in the lower half of oven so the top doesn't over brown. Bake for 15 to 20 minutes until the casserole is bubbly and topping is browned.

Tips:

  • Choose the right cauliflower: Use a head of cauliflower that is firm, white, and has tightly packed florets. Avoid heads with brown spots or wilted leaves.
  • Cut the cauliflower into uniform florets: This will help them cook evenly. If the florets are too large, they may not cook through in the center.
  • Use a food processor to grate the cauliflower: This is the easiest way to get the cauliflower into small, even pieces. You can also use a box grater, but it will take longer.
  • Season the cauliflower well: Use a combination of salt, pepper, garlic powder, and onion powder. You can also add other spices, such as paprika, cumin, or turmeric.
  • Use a good quality cheese: The cheese is one of the main ingredients in this dish, so it's important to use a cheese that you like and that melts well. Cheddar, mozzarella, and Parmesan are all good options.
  • Bake the cauliflower until it is golden brown and bubbly: This usually takes about 20-25 minutes. Keep an eye on it so that it doesn't overcook.

Conclusion:

Baked cheese cauliflower is a delicious and easy-to-make dish that is perfect for a weeknight dinner or a potluck. It's also a great way to get your kids to eat their vegetables. With its crispy, cheesy crust and tender, flavorful interior, this dish is sure to be a hit with everyone who tries it.
