I have been trying to come up with desserts for him so he doesn't feel left out. This is an amazing dessert and will stay fresh for days...if they last that long in your house! Perfect for Passover - no flour!

  • Use gluten-free rolled oats to ensure the bars are suitable for those with celiac disease or gluten intolerance.
  • For a richer flavor, use creamy peanut butter instead of regular peanut butter.
  • Feel free to mix and match your favorite chocolate chips. Semi-sweet, dark chocolate, or even white chocolate chips would all be delicious.
  • If you don't have a food processor, you can mash the bananas with a fork or potato masher. Just make sure they are very ripe and soft.
  • Be careful not to over-bake the bars. They should be set around the edges but still slightly gooey in the center.
  • Let the bars cool completely before frosting them. This will help the frosting set properly.
  • If you don't have any powdered sugar, you can make your own by grinding granulated sugar in a food processor or blender until it is fine and powdery.
  • Feel free to decorate the bars with additional chocolate chips, chopped nuts, or sprinkles before serving.
