3 ¾ cups gluten-free flour blend
1 cup white sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
1 very ripe banana
1 cup freshly brewed coffee, cooled to room-temperature
⅓ cup canola oil
1 ½ tablespoons almond milk
1 tablespoon apple cider vinegar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  • Whisk together gluten-free flour blend, sugar, cocoa powder baking soda, baking powder, and salt in a large bowl.
  • Mash banana in a bowl. Add cooled coffee, oil, almond milk, apple cider vinegar, and vanilla extract. Whisk until combined. Pour into flour mixture. Stir slowly until just combined; batter will be thick and gummy.
  • Ladle batter into the lined muffin tin, filling cups 2/3 full.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 18 to 20 minutes.

1 1/4 cups all-purpose flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1/3 cup canola oil or 1/3 cup vegetable oil
2/3 cup soymilk or 2/3 cup rice milk
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/4 cup dark chocolate, finely chopped

Steps:

  • Preheat your oven to 350 degrees and line your pan with paper liners.
  • Throw your mashed banana in a blender or push it through a sieve to make sure there are no lumps in it.
  • Sift the flour, baking soda, baking powder, salt and sugar into a large bowl, mix well. In a smaller bowl, whisk together the oil, soy or rice milk, vanilla, almond and mashed banana. Gently fold the wet ingredients into the dry, don't over mix or you'll get tough cupcakes. Small lumps are fine.
  • Fill liners 2/3 full, top the batter of each cupcake with 1 tsp of finely chopped chocolate and use a toothpick to gently stir them inches.

2 large bananas (about 225g), blackened and peeled
50ml vegetable or sunflower oil
65g light brown sugar
150g plain flour
2 tsp baking powder
2 tsp cinnamon
50g dried fruit and seed mix
2 tbsp oats
2 tbsp mixed seeds

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Mash the bananas in a medium bowl with a fork, then mix in the oil and sugar until combined.
  • Add the flour, baking powder, cinnamon and dried fruit and seed mix. Mix until well combined.
  • Line a cupcake tray with 10-12 cupcake cases (the amount you need will depend on how big the bananas are) and fill them ¾ full of the mixture. Sprinkle with the oats and mixed seeds.

1/4 cup canola oil
3/4 cup agave nectar
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1/4 cup tapioca flour
2 tablespoons flax seed meal
1/3 cup almond meal
1/2 cup rice flour
1/2 cup quinoa flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup margarine
1/2 cup agave nectar
2 teaspoons vanilla
1/3 cup cocoa powder
1/2 cup non-dairy powdered milk

Steps:

  • Cupcakes.
  • Preheat oven to 325°F; line muffin pan with 9 Liners and fill 3 remaining muffin cups with a little bit of water.
  • Mix together soy milk, canola oil, vanilla and almond extract and agave nectar.
  • Add flours, baking powder, baking soda, and salt one by one and mix for 1-2 minutes. Mixture will be thin.

  • Let cool in pan for 1 hour to allow agave to set.
  • Frosting.
  • Mix together margarine, agave, and vanilla until smooth.
  • Add cocoa powder (sift if necessary).
  • Add powdered soy milk.
  • If mixture is too watery, add more powdered soy milk. If too thick, add more agave until desired consistency is reached.
  • Frost cupcakes and enjoy!
