1/4 cup prepared basil pesto
Vegetable oil for brushing pan
1/4 cup finely chopped rinsed drained bottled roasted red peppers
20 oz soft mild goat cheese, softened at room temperature (2 cups)
3 tablespoons bottled black olive paste or tapenade
Accompaniment: crackers or toasts
Special Equipment
a 2 1/4-cup loaf pan (5 3/4 by 3 1/2 by 2 1/4 inches)

Steps:

  • Drain pesto in a small fine-mesh sieve set over a bowl 15 minutes, then discard excess oil.
  • Lightly oil loaf pan and line with a sheet of plastic wrap large enough to allow a generous overhang on all 4 sides.
  • Blot peppers well between paper towels to remove excess liquid.
  • Spread about one fourth (1/2 cup) of cheese evenly over bottom of loaf pan and top with all of pesto, spreading evenly. Drop 1/2 cup cheese by tablespoons over pesto and spread gently to cover pesto.
  • Top with chopped peppers, spreading evenly. Drop another 1/2 cup cheese by tablespoons over peppers and spread gently to cover peppers.
  • Spread olive paste evenly on top, then drop remaining cheese by tablespoons over olive paste, spreading gently to cover olive paste. Cover pan with another sheet of plastic wrap and chill at least 8 hours.
  • Remove plastic wrap from top of pan and invert torta onto a serving plate, then peel off remaining plastic wrap. Let torta stand at room temperature 20 minutes before serving.

¼ cup sweetened shredded coconut
¼ cup chopped pecans
1 (8 ounce) package reduced-fat cream cheese
1 (8 ounce) package goat cheese
1 tablespoon honey
1 teaspoon ground cinnamon
½ cup whole berry cranberry sauce

Steps:

  • Line a 6-inch springform pan with plastic wrap, and sprinkle half of the coconut and pecans evenly onto the bottom. Beat together the cream cheese, goat cheese, honey, and cinnamon in a bowl until no lumps of cheese remain. Spread half of the cheese into the springform pan, then spread the cranberry sauce on top. Carefully spread the remaining cheese over the cranberry sauce, and sprinkle with the remaining coconut and pecans. Cover the torta with a sheet of plastic wrap, and press down firmly to pack. Refrigerate overnight before serving. Remove the springform pan and plastic wrap to serve.

1/2 cup (1 stick) unsalted butter, softened
2 pounds Homemade Goat Cheese
1 teaspoon coarse salt
3/4 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
2 cups Ron Suhanosky's Mint Pesto
2 cups prepared fig or plum jam
Crackers, for serving

Steps:

  • Line an 8 1/2-by-4 1/2-inch loaf pan with parchment paper; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter until smooth. Add goat cheese, in batches, and beat until well combined and no lumps of butter remain. Season with salt and pepper; beat until well combined.
  • Divide goat cheese mixture into 3 equal portions. Using an offset spatula, carefully spread one portion of the goat cheese mixture over the bottom of the prepared terrine mold; top with pesto, spreading evenly to cover.
  • Spread a second portion of goat cheese mixture on top of the pesto and top with jam, spreading evenly to cover. Top with remaining portion of goat cheese mixture; cover with plastic wrap. Transfer to refrigerator and chill until firm. Slice crosswise and serve with crackers.

4 ounces goat cheese, room temperature
1 garlic clove, minced
2 teaspoons dried oregano
1/4 teaspoon pepper
1/4 cup prepared pesto sauce
1/4 cup sun-dried tomato packed in oil
1 -2 tablespoon slivered almonds (to garnish)
fresh oregano (to garnish) or parsley sprig (to garnish)

Steps:

  • Line a 8 x 3 loaf pan, soufflé pan or decorative mold with plastic wrap.
  • In a large bowl, with a hand mixer or by hand, combine cream cheese, goat cheese, garlic, oregano, and pepper; stir until well blended.
  • Spread 1/3 of the cheese mixture onto the bottom of prepared pan (I use wet fingers to spread the cheese). Top with pesto, spreading evenly.
  • Layer with another 1/3 of the cheese mixture.

2 cloves garlic, minced
4 t fresh oregano, crushed (or 1 ¼ t dried)
1/8 t freshly ground pepper
¼ c prepared pesto (can probably find at decent grocery)
½ c sun-dried tomatoes packed in oil
1-2 T slivered almonds, toasted
Fresh parsley or oregano sprig
Stone ground wheat crackers or thinly sliced baguette

Steps:

  • Line a 1-qt loaf or soufflé pan with clear plastic wrap. Cuisinart cheeses, garlic, oregano, and pepper until smooth. Spread 1/3 of mixture in bottom of pan. Top with pesto, spreading evenly. Layer with another 1/3 of cheese. Drain sun-dried tomatoes, reserving one tomato for garnish. Chop the rest and spread over cheese mixture in pan. Top with the remaining cheese. Cover with Saran wrap and press gently to pack the cheese. Chill several hours at least. Uncover cheese; invert onto serving plate. Cut reserved tomato into thin slices. Garnish torte with tomato, almonds, and parsley (can make flower or design or whatever).
