Surprisingly delicious cookies. Not too sweet, but tasty enough for any occasion. All children love these special treats. Sometimes I sprinkle the tops with a lemony glaze.

3/4 c shredded coconut
ORANGE BUTTER ICING
2 /12 Tbsp soft butter
1 1/2 c sifted powder sugar
1 1/2 Tbsp orange juice

  • 2. Frosting, Blend butter and sugar together. Add orange juice and grated orange rind. Mix till smooth.

Tips:

  • Use fresh carrots: Fresh carrots will give your cookies the best flavor and texture. If you don't have fresh carrots, you can use frozen carrots that have been thawed and drained.
  • Grate the carrots finely: This will help them blend into the cookie dough more easily and evenly.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature: This will help them develop a crispy exterior and a chewy interior.
  • Let the cookies cool completely before frosting them: This will help the frosting set properly.
