1 cup sweetened shredded coconut
1/2 cup toasted wheat germ
1/2 cup sesame seeds
1/2 cup sunflower kernels
1/2 cup slivered almonds
1-1/2 teaspoons salt
1-1/2 teaspoons ground cinnamon
1/2 cup canola oil
1/4 cup packed brown sugar
1/3 cup honey
1/3 cup water
1 tablespoon vanilla extract

Steps:

  • In a large bowl, combine the first eight ingredients. In a saucepan, cook and stir the oil, brown sugar, honey, water and vanilla until sugar is dissolved. 3/4 cup unsalted whole nuts
2/3 cup sweetened shredded coconut
1/2 cup sunflower kernels
1/3 cup sesame seeds

1/4 cup oat bran
2 tablespoons cornmeal
2 tablespoons whole wheat flour
1 tablespoon ground cinnamon
1/2 cup honey
2 tablespoons vegetable oil
2 tablespoons vanilla extract

I love tropical fruits for many reasons-they are sweet and juicy, have a luscious texture and fragrance, can be used in both savory and sweet dishes and they store well in the freezer. When tropical fruits are not in season, I buy them dried to make a granola that I can enjoy any time of the year. Coating the granola with finely ground banana chips is one way I ensure every bite has that punch of tropical flavor!

2 cups dried banana chips (6 ounces), broken by hand or chopped into small pieces
2 cups instant rolled oats (6.5 ounces)
2 ounces dried pineapple, roughly chopped into 1/4-inch pieces (1/2 cup)
2 ounces dried mango slices, roughly chopped into 1/4-inch pieces (1/2 cup)
2.5 ounces roasted unsalted macadamia nuts, roughly chopped into 1/4-inch pieces (1/2 cup)
1/2 cup unsweetened coconut chips (1 ounce)
1/4 cup toasted sesame seeds
1/2 cup unrefined coconut oil
1/2 cup pure maple syrup
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F. Line a rimmed baking sheet with parchment paper.

1 pound rolled oats
1 cup shredded, unsweetened coconut (or sweetened, if you prefer)
1/2 cup slivered almonds
1/4 cup sesame seeds
1/2 cup wheat germ
1/2 teaspoon coarse salt
1/2 cup safflower oil
1/2 cup honey
1/3 cup water
1 1/2 teaspoons pure vanilla extract
1/2 cup golden raisins
1/2 cup dried cranberries, blueberries, or other dried chopped fruit

Steps:

  • Preheat the oven to 250 degrees.
  • In a large bowl, toss together the oats, coconut, almonds, sesame seeds, wheat germ, and salt. Separately whisk together the oil, honey, water, and vanilla; stir it into the oat mixture.

1/2 cup vegetable oil
1/2 cup honey
1/2 cup pure maple syrup
1/2 cup creamy peanut butter
1/2 cup apple juice
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground ginger
1/4 teaspoon ground cloves
4 cups rolled oats (not instant)
2 cups natural bran
1/2 cup chopped pecans
1/2 cup pecan halves
1 cup almond halve (with skin)
1/4 cup whole cashews
3/4 cup shredded coconut, unsweetened

Steps:

  • Preheat the oven to 300 degrees F. In the container of a blender, put in the oil, honey, syrup, peanut butter, apple juice, cinnamon, ginger and cloves. Mix well. Remove the mixture to a large mixing bowl and add the oats, bran, both types of pecans, almonds and cashews. Mix thoroughly.
  • Spread the coconut on a jelly-roll pan and bake in the oven for 20 minutes. Stir once halfway through the cooking time. Let cool and reserve. Use two metal baking pans that measure 19"x12"x1 3/4" and line each with a piece of parchment paper. Divide the granola equally between the pans and toast for 1 hours, stirring occasionally, until the granola has an allover golden color. Remove from the oven and add the toasted coconut. Why buy bagged granola for $5/6 a bag when you can make your own. Most of the pre-made granolas you buy in the store are made with tons of sugar or high fructose corn syrup, AND a lot of them (I've found) contain milk powder. This was so easy to make at home and tasted AMAZING. The nuts I used were all raw, unsalted. Feel free to swap out whatever nuts or dried fruit you might have on hand. I actually used pecans in place of the walnuts, and a mix of half raisins and half dried cranberries for the dried fruit. Next time I might try some dried blueberries

Nonstick vegetable oil spray
1 cup shredded sweetened coconut
1/2 cup pine nuts
1/2 cup roasted salted sunflower seeds
1/2 cup natural unsalted cashews
1/2 cup roasted salted macadamia nuts
1/4 cup sesame seeds
1/2 cup pure maple syrup
1/4 cup vegetable oil
1/4 cup dark corn syrup
2 teaspoons mild-flavored (light) molasses
1/2 cup raisins

Steps:

  • Preheat oven to 300°F. Place oats on large rimmed baking sheet. Bake until oats are lightly toasted, stirring occasionally, about 15 minutes. Transfer baked oats to large bowl.
  • Increase oven temperature to 350°F. Spray same rimmed baking sheet with nonstick spray. Mix shredded coconut, all nuts, and sesame seeds into baked oats.
