My aunt once made potatoes like these for us. When I couldn't remember her exact recipe, I created this version. The lightly seasoned coating on the potatoes cooks to a pretty golden brown.

GOLDEN DICED POTATOES II

I found this recipe in the same cookbook as Chef#230860 did. And since she "tweaked" it a bit, I thought I would post the original version. Because there are some of us that "can't stand the heat" of some foods. The only change I used was to use butter flavored shortening instead of the butter.Tiffany Wegerer from Colwich, Kansas was the one that sent this into "Simple & Delicious". GOLDEN DICED POTATOES

The light coating gets crispy fried in the butter. My husband loves potatoes this way better than just fried potatoes in oil.

Time 40m

Number Of Ingredients 7

3/4 c all-purpose flour
1 tsp seasoned salt
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp black pepper
4 medium potatoes, peeled and cut in 1/2
1/2 c butter

Steps:

  • 1. In a large re-sealable bag combine first 5 ingredients. Add 1/2 cup potatoes at a time; shake to coat.
  • 2. In a large skillet, melt butter. Add potatoes; cook and stir over medium heat 25-30 minutes until potatoes are tender.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Gold or Red Bliss hold their shape well and won't easily fall apart during cooking, making them ideal for dicing and roasting.
  • Cut the potatoes evenly: Uniformly sized potato pieces will ensure even cooking. Aim for 1-inch cubes or similar-sized pieces.
  • Soak the potatoes (optional): Soaking the potatoes in cold water for 30 minutes before cooking removes excess starch, resulting in crispier potatoes.
  • Season generously: Don't be shy with the seasonings! A combination of salt, pepper, garlic powder, paprika, and dried thyme or rosemary will add plenty of flavor. You can also toss the potatoes with fresh herbs like parsley or chives before roasting.
  • Roast at high heat: High heat will help the potatoes develop a golden-brown crust and a fluffy interior. Aim for a temperature between 425°F (220°C) and 450°F (230°C).
  • Don't overcrowd the pan: Make sure there is enough space between the potato pieces on the baking sheet so that they can roast evenly. Overcrowding will result in steamed potatoes instead of roasted ones.
  • Flip the potatoes halfway through cooking: This ensures that all sides get evenly browned and crispy.
  • Roast until tender: The potatoes are done when they are tender on the inside and golden brown on the outside. Test them with a fork or toothpick; they should pierce easily.

Conclusion:

Golden diced potatoes are a versatile and delicious side dish that can complement a variety of main courses. Whether you're serving them with roasted chicken, grilled salmon, or a hearty stew, these crispy and flavorful potatoes are sure to be a hit. With just a few simple ingredients and a bit of time, you can easily create this classic dish that will be enjoyed by all.
