GOLDEN PARMESAN POTATOES
I love the ease of these delicious potatoes. They remind of restaurant style Mojo's but not as spicy. They have a delightful crispy crust on the outside but soft and tender on the inside. And since I prefer to control what is in the mix I know they won't be too salty so it's good for our diet.

Tips:
- Select the right potatoes: Choose firm, waxy potatoes like Yukon Gold or Red Bliss. These hold their shape well and won't become mushy when roasted.
- Cut potatoes uniformly: Cut potatoes into evenly sized pieces so they cook evenly. Aim for 1-inch cubes or wedges.
- Toss potatoes with oil and seasonings: Before roasting, toss the potatoes with olive oil, salt, pepper, and any other desired seasonings. This will help them crisp up and develop flavor.
- Roast potatoes at a high temperature: Roast the potatoes at a high temperature (425°F or 220°C) for a crispy exterior and tender interior. Cook them until they are golden brown and easily pierced with a fork.
- Add parmesan cheese and herbs at the end: Stir in grated parmesan cheese and chopped fresh herbs like parsley or thyme towards the end of roasting. This will add a delicious cheesy flavor and aroma.
