6 tablespoons butter, cubed
3/4 cup water
1/4 teaspoon garlic salt
3/4 cup all-purpose flour
3 eggs
1 package (5 ounces) frozen cooked salad shrimp, thawed
1/4 cup chopped green onions
5 tablespoons grated Parmesan cheese, divided

Steps:

  • In a saucepan, bring butter, water and garlic salt to a boil. Add flour all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny., Stir in the shrimp, onions and 4 tablespoons Parmesan cheese. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Sprinkle with remaining Parmesan cheese. Bake at 400° for 25-30 minutes or until golden brown. Serve warm.

Filling:
2 cups finely chopped cooked chicken
1 can (8 ounces) crushed pineapple, drained

1/4 cup chopped celery
1/4 cup thinly sliced green onions
1/4 cup chopped pecans
2 tablespoons sweet pickle relish

3 Bartlett pears (about 1 1/2 pounds total)
6 large egg yolks
1/3 cup sugar
Pinch of salt
2 tablespoons cornstarch
1 2/3 cups whole milk
1 tablespoon unsalted butter, softened
1/2 cup heavy cream

Caramel Pear Slices

Steps:

  • Peel and core pears, and cut into 1/2- inch pieces. Place in a steamer rack set over a pot of boiling water, and cook until soft, about 15 minutes. Let cool. Puree in a blender until completely smooth.
  • Whisk egg yolks, sugar, and salt in a medium bowl. Whisk in cornstarch. Heat milk in a medium saucepan over medium- high heat just until bubbles begin to form, about 3 minutes. Using a ladle, gradually add hot milk to the yolk mixture, whisking constantly. Return mixture to pan; cook over medium heat, whisking constantly, until mixture begins to bubble and becomes very thick, about 8 minutes. Using a wooden spoon, scrape bottom and sides of pan occasionally as mixture thickens. Remove from heat.
  • Pour through a large-mesh sieve into a bowl. Add butter; stir until butter has melted. Add pear puree; stir to combine. Place plastic wrap directly on surface; refrigerate until cold, about 30 minutes.
  • Put heavy cream into the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until stiff peaks form. Fold whipped cream into pastry cream.
  • Transfer to a pastry bag fitted with a 1/4-inch plain round tip (such as Ateco #802). Poke a small hole in the bottom of each pastry puff with a skewer. Fill puffs with pastry cream. Arrange 4 cream puffs on each plate in a pyramid. Spoon about 4 warm caramel pear slices over each serving, and drizzle with sauce.

24 large shrimps (peeled and deveined, with tails intact) (425g)
½ tsp salt
¼ tsp sugar
¼ tsp ground white pepper
Batter
1 large egg
½ cup all-purpose flour (75g)
½ cup (65g) rice flour

Steps:

  • Combine shrimps, salt, sugar, and ground white pepper in a bowl. Mix well. Set aside. Crack eggs into another bowl. Break up the yolk with a fork or whisk. Add all-purpose flour, rice flour, baking powder, salt, and ½ cup (120ml) water. Stir to mix into a smooth batter. Heat 1 inch vegetable oil in a small pan. Place ¼ cup (33g) rice flour in a shallow bowl. Holding shrimp by the tail, dredge in rice flour. Then dip in batter and gently lower shrimp into hot oil. Repeat. Fry in batches. Do not over crowd pan. Fry shrimp puffs turning occasionally until golden brown, about 2 to 3 minutes each batch. Remove and drain on metal strainer. Serve immediately with sweet chili sauce.

when i was little my mother used to make whop doughnuts. which is simply canned biscuits with a hole poked in it, fried and rolled in sugar. she called them whop doughnuts because of the sound the can of biscuits makes when you bang it on the counter to open it. This is my from scratch version. they are fun to make and fun to eat.

2 cups flour, sifted
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon nutmeg
1/4 cup oil
3/4 cup milk
