FRENCH TOAST

To make the best French toast, Alton Brown uses day-old bread and honey instead of sugar in this recipe from Good Eats on Food Network.

Categories     main-dish

Time 34m

Yield 4 servings

Number Of Ingredients 6

1 cup half-and-half
3 large eggs
2 tablespoons honey, warmed in microwave for 20 seconds
1/4 teaspoon salt
8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread
4 tablespoons butter

Steps:

  • In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.
  • Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.
  • Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

GORDON'S TOASTS

I don't know who Gordon is, but I would love to thank him for a wonderful recipe. These can freeze for up to 3 months. Take what you need out and broil until bubbly. How much easier can it get?

Categories     Cheese

Time 50m

Yield 60-70 toasts

Number Of Ingredients 7

12 ounces sharp cheddar cheese, grated
1 small onion, minced
3/4 cup almonds, toasted, chopped
1/2 lb bacon, fried crisp, drained & chopped
1 1/2 cups mayonnaise
2 1/2 teaspoons Worcestershire sauce
2 loaves sandwich bread

Steps:

  • Mix all the ingredients.
  • Trim crusts. Cut into fours squares or triangles.
  • Coat each square with some cheese mixture, making sure to cover the edges. Place on tray. Store triangles between wax paper.
  • Freeze for up to 3 months.
  • If using immediately, broil the toast sections until the cheese mixture is bubbly and golden, about 3 - 5 minutes. Serve hot.
  • Frozen toast will require slightly longer under the broiler. There is no need to thaw them before broiling.

Tips:

  • Choose high-quality bread: The type of bread you use will make a big difference in the final product. Look for a bread that is sturdy enough to hold up to the toppings, but not too dense. A good option is a sourdough or a French baguette.
  • Spread the butter or oil evenly: When you're spreading the butter or oil on the bread, make sure to do it evenly so that every bite is flavorful. You don't want some bites to be dry and others to be greasy.
  • Don't overload the toast: It's tempting to pile on the toppings, but it's important to resist the urge. If you overload the toast, it will be difficult to eat and the flavors will be muddled. Stick to a few simple toppings that complement each other.
  • Toast the bread until it's golden brown: The perfect toast is golden brown and crispy. Keep an eye on the toast as it's cooking so that you don't burn it.
  • Serve the toast immediately: Toast is best enjoyed immediately after it's made. The longer it sits, the more the bread will soften and the toppings will lose their flavor.

Conclusion:

Toast is a simple but delicious dish that can be enjoyed for breakfast, lunch, or dinner. With so many different toppings to choose from, there's a toast recipe out there for everyone. Whether you like your toast sweet or savory, simple or complex, there's a recipe in this article that you're sure to love.
