6 ounces creamy goat cheese
24 plump Medjool dates
12 slices thinly sliced bacon, cut in half
1/3 cup honey
1 tablespoon chopped fresh rosemary
1/2 teaspoon cayenne pepper (using more or less to taste)
kosher salt and black pepper
candied or toasted walnuts ((optional))

In a small bowl, combine the honey, rosemary, cayenne, and a pinch each of salt and pepper. Evenly drizzle 1/2 the honey over the dates. TWICE-BAKED GOUDA-STUFFED POTATOES

Twice-Baked Gouda-Stuffed Potatoes image

A twist on twice-baked potatoes using Gouda. Can make early in the day and refrigerate prepared potatoes until ready to bake.

Provided by gailanng

Categories     Potato

Time 1h39m

Yield 4 serving(s)

Number Of Ingredients 11

4 russet potatoes
vegetable oil or vegetable shortening
1 1/2 cups gouda cheese, shredded and divided
2 -3 tablespoons heavy cream
1/2 cup sour cream
2 tablespoons butter
2 tablespoons green onions, thinly sliced
1 tablespoon fresh parsley, minced
4 slices bacon, cooked crisp and crumbled
salt and pepper
minced fresh parsley (to garnish)

Steps:

  • Preheat oven to 400 degrees. Scrub and dry potatoes. Rub surface with a little vegetable oil or vegetable shortening. Prick in several places with fork.
  • Bake in preheated oven for approximately 1 hour or test for doneness by gently squeezing the middle of the potato, using a pot holder. If it gives in easily to your touch, it is done. Remove potatoes to a work surface.
  • Reduce oven temperature to 350 degrees. Cut potatoes in half lengthwise and allow to cool long enough to handle. Scoop out flesh with a spoon, being careful to leave shells intact (about 1/4-inch thick) and place in a bowl. Add 1 cup of the cheese, plus the sour cream, heavy cream, butter, green onion, parsley, salt and pepper to the potato flesh. Mash with potato masher or beat until just smooth with an electric mixer.
  • Fill potato shells with potato mixture; sprinkle with bacon and remaining cheese. Bake at 350 degrees for 20 minutes or until golden. Garnish with minced fresh parsley.

Tips:

  • Choose the right dates: Medjool dates are the best choice for stuffing, as they are large and have a soft, chewy texture. Deglet Noor dates are also a good option, but they are smaller and have a drier texture.
  • Pit the dates carefully: Use a sharp knife to make a lengthwise slit in each date and remove the pit. Be careful not to cut the date in half.
  • Don't overstuff the dates: The dates should be filled, but not so full that they burst open. If you are using a soft cheese, such as goat cheese or cream cheese, you can use a piping bag to fill the dates. If you are using a harder cheese, such as cheddar or Gouda, you can use a small spoon.
  • Wrap the dates in bacon: Wrapping the dates in bacon adds a delicious smoky flavor and helps to hold the filling in place. If you are not using bacon, you can wrap the dates in prosciutto or ham.
  • Bake the dates until the bacon is crispy: The dates should be baked until the bacon is crispy and the cheese is melted and bubbly. Depending on the type of cheese you are using, this may take anywhere from 10 to 20 minutes.
  • Serve the dates warm: The dates are best served warm, when the cheese is melted and gooey. You can serve them as an appetizer, main course, or dessert.

Conclusion:

Gouda-stuffed dates are a delicious and easy-to-make appetizer that is perfect for any occasion. They are also a great way to use up leftover cheese. With just a few simple ingredients, you can create a dish that is sure to impress your guests. So next time you are looking for a quick and easy appetizer, give Gouda-stuffed dates a try.
