This classic deviled eggs recipe is a creamy, rich, and easy but elegant appetizer. Your choice of paprika will determine the depth of flavor.

Yield Makes 6 hors d'oeuvre servings

Number Of Ingredients 7

6 large eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/8 teaspoon cayenne
Garnishes: paprika and chopped fresh chives
Special Equipment
Pastry bag fitted with 1/2-inch star tip (optional)

Steps:

  • Cover eggs with cold water by 1 1/2 inches in a 3-quart heavy saucepan and bring to a rolling boil, partially covered. Reduce heat to low and cook eggs, covered completely, 30 seconds. Remove from heat and let stand, covered, 15 minutes. Transfer eggs with a slotted spoon to a bowl of ice and cold water to stop cooking and let stand 5 minutes.
  • Peel eggs and halve lengthwise. Carefully remove yolks and mash in a bowl with a fork. Add mayonnaise, mustard, and cayenne and stir with fork until smooth, then season with salt and pepper. Fill pastry bag with yolk mixture and pipe into egg whites.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the overall flavor of your deviled eggs.
  • Hard-boil your eggs perfectly. Overcooked eggs will be dry and crumbly, while undercooked eggs will be runny. For perfectly hard-boiled eggs, place them in a single layer in a saucepan and cover them with cold water. Bring the water to a boil over high heat, then cover the pan and remove it from the heat. Let the eggs stand in the hot water for 10-12 minutes, then drain them and immediately place them in an ice bath to stop the cooking process.
  • Make sure your filling is well-seasoned. Deviled eggs should have a rich, savory flavor, so don't be afraid to use plenty of salt, pepper, and other seasonings.
  • Be creative with your toppings. There are endless possibilities when it comes to topping deviled eggs. Some popular options include paprika, chopped chives, crumbled bacon, and smoked salmon.
  • Serve your deviled eggs chilled. This will help them to hold their shape and prevent them from becoming too runny.

Conclusion:

Deviled eggs are a classic party appetizer that is always a crowd-pleaser. They are easy to make and can be customized to your own taste. With a little creativity, you can create deviled eggs that are both delicious and visually appealing.
