2 skinless, boneless chicken breast halves
1 (10 ounce) can refrigerated pizza crust
½ cup Ranch-style salad dressing
1 cup shredded mozzarella cheese
1 cup shredded Cheddar cheese
1 cup chopped tomatoes
¼ cup chopped green onions

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a pizza pan or medium baking sheet.
  • Place chicken in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear. Cool, then either shred or chop into small pieces.
  • Unroll dough, and press into the prepared pizza pan or baking sheet. Bake crust for 7 minutes in the preheated oven, or until it begins to turn golden brown. Remove from oven.
  • Spread ranch dressing over partially baked crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Return to the oven for 20 to 25 minutes, until cheese is melted and bubbly.

1 lb prepared pizza dough, room temperature (I used Pizza Dough Bread Machine for one pie)
1 tablespoon olive oil
1 small sweet onion, sliced
4 -6 fresh figs, cut in half
5 ounces goat cheese (if you can get goat cheese with cranberries it fabulous)
1 teaspoon chopped fresh rosemary
1/2 cup mozzarella cheese, shredded
olive oil
cornmeal

Steps:

  • In a pan saute onions in oil till a caramel color, set aside to cool completely.
  • Preheat oven to 450 degrees.
  • Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
  • Place on a pan that is dusted with corn meal.
  • Spread a thin coat of olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Place in oven and bake for 15-20 minutes.
  • ALTERNATE method:.
  • If grilling preheat grill to medium high.
  • Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
  • Flip and then lightly spread olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Cook a couple more minutes.

1 cup warm water (110 degrees F/45 degrees C)
1 tablespoon honey
2 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
3 ½ tablespoons peanut butter
3 tablespoons brewed black tea
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons chili oil
1 tablespoon minced fresh ginger
2 teaspoons honey
1 boneless chicken breast half, cooked and sliced into thin strips
2 tablespoons toasted sesame seeds
1 tablespoon paprika
1 small fresh red chile pepper, finely chopped
1 teaspoon salt
4 green onions, sliced
1 cup grated mozzarella cheese
1 carrot, peeled and grated
¼ cup chopped fresh cilantro

Steps:

  • Pour warm water into a small bowl; stir in honey until dissolved. Add the yeast, stirring until dissolved. Let stand until creamy, about 10 minutes.

1 tablespoon yeast
1 cup warm water
1 teaspoon sugar
1 teaspoon salt
2 tablespoons olive oil
2 1/2 cups flour
2 -3 tablespoons olive oil
3 cloves fresh garlic, minced
2 -4 tablespoons grated parmesan cheese (I don't really measure)
8 ounces cooked shrimp or 8 ounces lobster meat, diced and well drained if necessary
2 -3 medium tomatoes, diced and drained
2 tablespoons fresh basil, cut into 1/8-inch strips
8 ounces shredded mozzarella cheese
fresh ground black pepper, to taste

Steps:

  • Dough: dissolve yeast in water in a large bowl. Allow to set for a few minutes until it begins to foam.
  • Add sugar, salt, oil and 1 1/2 c flour and stir gently to combine. Add remaining flour and combine thoroughly. (I usually knead it a little in the bowl too.).
  • Let rest for about 30 minutes. Pat out onto large, greased pizza pan.
  • While dough is resting, mince garlic and mix with olive oil and allow to set to infuse flavor throughout.
  • Spread oil and garlic over entire crust. Sprinkle with Parmesan cheese. Layer the shrimp or lobster meat, tomato, basil and mozzarella as desired and sprinkle with black pepper to taste.
  • Bake at 400°F for 20 minutes.

10 medium sun-dried tomatoes, without oil

Toppings:
2-3 cups fresh spinach, torn and stemmed
2 ripe Roma plum tomatoes
8-10 pitted black olives
1 cup diced sweet onion
6-8 Crimini mushrooms
4 tbs olive oil
1 1/2 cups crumbled Feta
1/2 shredded Parmesan
1 clove minced garlic (optional)
(note- measurements are apporoximate....it's a pizza, adjust to suit your taste!)
Sauce:
1/4 cup butter
3/4 cup Parmesan
1 tsp garlic powder
1/8 tsp white pepper
1 quart whipping cream
8 oz cream cheese

Steps:

  • Preaheat oven to 450 degrees. Start the sauce first. Melt butter in a heavy saucepan, then add cream cheese, and whisk in whipping cream in a steady stream, until smooth. Add cheese, pepper, and garlic powder, and simmer for 15 minutes, until creamy smooth. Allow to cool for a few minutes. While sauce is simmering, in a large skillet, heat oil over medium heat. Add onions, and sautee until golden, about 10 minutes. (optional- add 1 clove finely minced garlic). Add mushrooms, and sautee for 1-2 minutes, just to allow the mushrooms to absorb some of the flavor. Remove from heat, and add spinach, tossing to coat with oil. Spread 4-5 spoonfuls of sauce onto crust, covering generously, to within 1/2 inch of edges. Top with spinach mixture, then layer with thinly sliced Roma tomatoes. Sprinkle with sliced black olives. Cover evenly with feta and parmesan cheeses. Bake 12-14 minutes, or until cheese is just browned. Slice, serve, and enjoy!

Now, on to the delish sauce:
Makes about 4 pizzas
12 cups flour
1 tablespoon salt
3 tablespoons instant yeast
1/2 cup sugar
2 tablespoons dough enhancer (optional) (I didn't use this)
1/2 cup canola oil
4 cups warm water
1 tablespoon oregano
1/2 tablespoon garlic powder or garlic salt
1 cup ranch dressing
1 Tbl. minced garlic
1/4 cup Parmesan cheese
Simply mix together and spread over crust.
Toppings:
LOTS of Mozzerella Cheese
Sprinkle of Cheddar Cheese
1-2 chicken breasts (per pizza) grilled and chopped (I like to use my George Forman)
2-3 roma tomatos diced
Green onion chopped

Steps:

  • Dough n a large Bosch mixer (if you have a Kitchen Aid, divide the recipe in half), combine the flour, salt, yeast, sugar, and dough enhancer. In a glass liquid measuring bowl, warm the water in the microwave for 2 minutes. (I did this by hand since I don't have a mixer. Little extra work, but totally do-able). Add the water and oil to the flour mixture a few cups at a time. When combined, let the dough mix for 2 minutes. Dough should be elastic and not stick to your fingers. Add more flour if too sticky, more water if too dry. Let the mixer knead the dough for 8 minutes. Preheat oven to 500ºF. Place a pizza stone (best for a crispy crust) in the oven while it is heating up. Or use a greased baking sheet. Shape dough into a large circle, then cut it into four sections with a knife. Lightly oil counter top and roll out each pizza crust with a rolling pin. Fold over the edges and press down to form a crust. With a fork, pierce pizza dough every inch or two to reduce the number of bubbles in the crust. Sprinkle cornmeal or flour on the pizza pans and place pizza dough on pans by folding over half the dough on your forearm and then lifting dough onto pizza pan. Bake each pizza for 4 minutes at 500ºF. You can freeze pizza crust (when cooled) or continue with toppings. Remove hot crust from oven and top with ½ cup cheese first (this will keep the frozen pizza from getting soggy). Prepare pizza sauce (recipe follows) and pour sauce on top of cheese. Pile on toppings; top again with cheese. Cool pizza and then wrap it in plastic wrap without the pan. Label "425ºF for 10 to 15-18 minutes" and freeze. You can also freeze extra sauce in zip-top freezer bags. To serve: Do not defrost frozen pizza. Remove and discard plastic wrap. Place pizza on a pizza stone dusted with cornmeal, or on an aluminum pan in the oven while it is pre-heating to 425ºF. When the oven reaches 425ºF, bake for 15-18 minutes or until cheese is melted and crust is golden. Boy, this is a lot of info. Did I mention brushing the crust with egg white or butter before the final bake? Yummy, it adds a nice touch! Now, go on and impress the fam with your cost-friendly, better than delivery or carryout, pizza!
