Time 4h15m

Yield 16

Number Of Ingredients 8

8 medium yams, peeled and cubed
½ cup white sugar
½ cup brown sugar
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
6 tablespoons unsalted butter, cut into small chunks
1 cup orange juice, or as needed
1 cup miniature marshmallows, or to taste

  • Mix white sugar, brown sugar, cinnamon, and nutmeg together in a small bowl.

  • Bake in the preheated oven, basting often, until yams are tender and the liquid is thick and sticky, 3 to 3 1/2 hours. Sprinkle with mini marshmallows. Turn on the oven's broiler. Broil until marshmallows are melted and toasty, about 5 minutes.

Tips:

  • Choose the right yams: Look for firm, unblemished yams that are about the same size. Avoid yams with soft spots or bruises.
  • Peel and cut the yams evenly: This will help them cook evenly.
  • Soak the yams in water before cooking: This will help to remove some of the starch and make them less likely to stick together.
  • Boil the yams until they are tender: This should take about 15-20 minutes.
  • Make the glaze: While the yams are boiling, make the glaze by combining brown sugar, butter, vanilla extract, and orange zest in a saucepan. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  • Add the yams to the glaze: Once the yams are tender, drain them and add them to the glaze. Stir to coat the yams evenly.
  • Bake the yams: Pour the yams and glaze mixture into a baking dish and bake at 350°F for 15-20 minutes, or until the glaze is bubbly and the yams are caramelized.
  • Serve warm: Candied yams are best served warm, but they can also be made ahead of time and reheated when ready to serve.

Conclusion:

Candied yams are a classic Southern dish that is perfect for any special occasion. They are sweet, sticky, and flavorful, and they are sure to be a hit with your family and friends. With just a few simple ingredients and a little bit of time, you can make candied yams that will be the star of your next meal.
