Time 30m

Yield Makes 26

Number Of Ingredients 13

1 cup all-purpose flour (spooned and leveled)
1 cup whole-wheat flour (spooned and leveled)
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon coarse salt
Ground cloves
1/2 cup (1 stick) unsalted butter, room temperature
1 cup packed dark-brown sugar
2 large eggs
3 tablespoons whole milk
1 Granny Smith apple, peeled, cored, and diced small
1 cup raisins
3/4 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, whisk together flours, baking soda, nutmeg, salt, and pinch of cloves. In a large bowl, using an electric mixer, beat butter and brown sugar on high, scraping down bowl as needed, until light and fluffy, about 4 minutes. Beat in eggs, one at a time, scraping down bowl after each addition. With mixer on low, beat in half the flour mixture, then milk and remaining flour mixture. Beat just until combined.
  • With a rubber spatula, fold apples and raisins into dough. Drop dough in 2-tablespoonful mounds, 2 inches apart, onto two baking sheets. Bake until cookies are firm around edges, about 14 minutes, rotating sheets halfway through. Let cool completely on wire racks.
  • In a small bowl, whisk together confectioners' sugar and 1 tablespoon water. Transfer to a zip-top bag. Snip a very small hole in one corner and drizzle glaze over cookies.

GRANDMA'S APPLE CAKE

Grandma's apple cake image

A classic one here. A simple, fuss free, easy apple cake. Basically you just need to stir the ingredients together and pop some apples on top. You can dust it with vanilla icing sugar when it has cooled down if you like.

Provided by alida1

Time 1h

Yield Serves 8

Number Of Ingredients 13

200 g flour
50 g cornflour
2 eggs
the juice and the zest of one organic lemon
2 tsp of raising agent
125 g sugar
120 g butter
a pinch of salt
2 tbsp milk
1 tsp vanilla essence
3 apples
2 tbsp apricot jam
1 tbsp hot water

Steps:

  • Pre-heat the oven at 180 C.
  • In a bowl work the butter to a creamy consistency (an electric mixer would make it easier). Gradually add the sugar, eggs, vanilla essence, salt, juice and zest of the lemon. Incorporate well then add the flour, the cornflour and the raising agent. Stir well and add the milk.
  • You should get a mixture which falls heavily from the spoon, not to runny, not too thick.
  • Pour it all in a round cake tin.
  • Peel and slice the apples into quarters, scrape them with a fork and lay them on the cake.
  • Put the cake on the lower rack of the oven and cook for about 45 minutes.
  • Switch the oven off, take the cake out but leave the oven door shut.
  • Stir the jam with the hot water and when the cake is cooked spread it all over it and put it back into the hot oven for 5-10 minutes.

Tips:

  • Choose the right apples: Use a variety of apples that are good for baking, such as Granny Smith, Braeburn, or Honeycrisp. These apples will hold their shape and not become too mushy when baked.
  • Peel and core the apples: This will help to ensure that the cookies are evenly cooked and have a smooth texture.
  • Use a sharp knife to slice the apples: This will help to prevent the apples from browning and will also make it easier to slice them evenly.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies at the right temperature: The cookies should be baked at a moderate temperature (350 degrees Fahrenheit) for about 10-12 minutes. This will help to ensure that the cookies are cooked through without becoming overdone.

Conclusion:

Grandma's apple cookies are a delicious and easy-to-make treat that are perfect for any occasion. With a few simple tips, you can make sure that your cookies turn out perfect every time. So next time you're in the mood for a sweet treat, give this recipe a try. You won't be disappointed!
