2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened
1-1/4 cups sugar
2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons cream of tartar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. 1 teaspoon cinnamon, plus 1 tablespoon cinnamon
1 tablespoon sugar
1/3 cup butter
1/2 cup sugar, plus 1 tablespoon

1 egg
1/2 cup milk

1/2 tablespoon baking powder
1 vanilla bean
2 cups milk scalded
6 yolks
1/2 cup sugar

Steps:

  • Peel the apples and cut into thin slices. Toss slices in a bowl with 1 tablespoon of cinnamon and 1 tablespoon of sugar. Melt butter. Brush mold with butter. Cool the remaining butter to room temperature and add 1/2 cup of sugar and brown sugar. Whisk butter and sugars until fluffy. Add egg with milk and whisk. Stir in flour, baking powder and remaining 1 teaspoon cinnamon. Pour into the mold. Put the sliced apples on top and bake in a preheated 350-degree oven for 40 minutes.;

This was a massive hit when i was growing up. My grandma would make this weekly and as visitors called she would have orders to make her guests a cake for the following week. She served it with custard, vanilla ice cream or fresh cream and all were equally delicious! This was a great cake to eat during the winter served hot with custard. I have now started to add a handful of flaked almonds, sprinkled on top of the cake (just before it goes in the oven) The addition of the flaked almonds, seems to be an even bigger hit! Enjoy!
