GRANDMA'S CORN FLAKE COCONUT MACAROONS

Grandma's Corn Flake Coconut Macaroons image

A fast and easy recipe that is great for mailing to friends and family, festively snowy white, and very tasty with a pleasantly crunchy and chewy texture. This recipe originally comes from my great-grandmother and has been handed down through four generations. My Grandma Sally makes these almost every year for Christmas and it is one of my favorite Christmas cookie recipes. The cookies will be chewy-crunchy when finished cooling, not gooey.

Time 50m

Yield 60

Number Of Ingredients 7

4 egg whites
1 cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
3 cups corn flake cereal
1 cup sweetened flaked coconut
½ cup chopped walnuts

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line baking sheets with parchment paper sprayed with cooking spray.
  • Beat the egg whites in a bowl with an electric mixer until they form stiff peaks. Gradually beat in the sugar, adding about 2 tablespoons at a time. Beat in the salt and vanilla extract until the mixture is glossy and holds its shape. Gently and lightly use a rubber spatula to fold the corn flakes, coconut, and walnuts into the meringue. Gently run the spatula through the center of the bowl, then around the sides of the bowl, repeating until fully incorporated. Drop the mixture by rounded tablespoons onto the prepared baking sheets.
  • Bake in the preheated oven until the cookies are very lightly browned and set, 20 to 30 minutes. Let cool completely before removing with a metal spatula; warm cookies are very fragile.

GRANDMA'S FLAKE COOKIES

My grandmother always has these cookies in the cookie jar. For a nut-free version, I use 1/2 c extra corn flakes. Can also sub bran flakes, wheat flakes, Total cereal, whatever you have on hand. Makes a very thin, crunchy but chewy cookie. One of my husband's favorites.

Time 45m

Yield 2 1/2 dozen

Number Of Ingredients 11

1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/3 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 egg
1/2 cup chopped pecans
1 cup corn flakes

Steps:

  • Cream butter with sugars.
  • Add egg and vanilla.
  • Mix flour, baking powder, salt and baking soda.
  • Add to butter mixture.
  • Stir in pecans and cornflakes.
  • Drop by teaspoonfuls onto ungreased cookie sheets.
  • Bake at 375 for 10-12 minutes.

Tips:

  • Use fresh coconut. Fresh coconut flakes will give your cookies a more intense coconut flavor. If you're using dried coconut flakes, be sure to soak them in hot water for 10 minutes before using to soften them.
  • Toast the coconut flakes. Toasting the coconut flakes will bring out their flavor and make them more golden brown.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they're golden brown. The cookies are done baking when they're golden brown around the edges and the tops are just set.

Conclusion:

These coconut corn flake cookies are a delicious and easy-to-make treat. They're perfect for any occasion, and they're sure to be a hit with everyone who tries them. So next time you're looking for a sweet and satisfying snack, give these cookies a try.
