Number Of Ingredients 6

2-1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup shortening
1 can (15-3/4 ounces) sweet potatoes, drained
3/4 cup 2% milk

Steps:

  • In a large bowl, combine the flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. In another bowl, mash the sweet potatoes and milk. Add to the crumb mixture just until combined., Turn onto a floured surface; knead 8-10 times. Roll to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on ungreased baking sheets. , Bake at 425° until golden brown, 8-10 minutes. Remove to wire racks. Serve warm.

cooking spray
3 cups cut canned yams
4 eggs, slightly beaten
1 cup water
1 cup evaporated milk
1 cup brown sugar
1 cup white sugar
1 cup butter, softened
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
4 teaspoons water
4 teaspoons baking powder
1 teaspoon salt
4 cups chopped pecans
2 cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 12x9-inch baking dish with cooking spray.
  • Beat yams, eggs, 1 cup water, evaporated milk, 1 cup brown sugar, 1 cup white sugar, 1 cup butter, and vanilla extract together in a large bowl with an electric hand mixer until smooth; spread into prepared baking dish.
  • Mix flour, 1 cup butter, 1 cup brown sugar, 1 cup white sugar, 4 teaspoons water, and baking powder together in a separate bowl. Stir pecans and coconut into the flour mixture and sprinkle over the yam mixture.
  • Bake in preheated oven until the topping is lightly browned, about 45 minutes. Cool at room temperature 10 to 15 minutes before serving.

My Grandmother all way's made this recipe,for Thankgiving,Christmas,and Easter Sunday.When she became to ill to cook she made sure ,I took over the holiday cooking .One of my twin brothers,all way,s ask's for this as his choice of a dish....As I put it together and put it in the oven ,I still can see her as she fixed this dish....Some how it does not taste quite the same as when she made it for us all those years ago..

3 cup(s) mashed sweet potatoes-( i used canned whole one's drain well)
1/2 stick(s) real butter-melted
1/2 teaspoon(s) salt
1/2 tablespoon(s) good vanilla extract
1 cup(s) sugar
1/2 cup(s) of half and half cream
2 large eggs -beaten
TOPPING FOR CASSEROLE
1 1/4 cup(s) brown sugar
1/2 stick(s) butter soften (use real butter)
1/3 cup(s) flour (i use self rising)
1 cup(s) chopped pecans or walnuts

Steps:

  • Mix the mashed Sweet Potatoes ,butter,salt vanilla extract,sugar,milk,and the beaten eggs together and pour into a casserole dish that has been sprayed with non stick spray....Then MIX the topping and spread on top of the Sweet Potatoe Casserole .Bake at 350 degrees and Bake for 35 to 40 minutes ...
  • Pour Sweet Potatoe mixer into casserole dish.
  • Mix topping for casserole.
  • Sprinkle mixed topping over the casserole and bake at 350 degrees for 35 to 40 minutes.
  • After it comes out of the oven, let it set for 20 to 25 minutes before serving.

  • Mash the potatoes with the butter; add the sugars and the eggs, stir.
  • Add the pudding mix, stir up real good.
  • Add the pinch of salt, nutmeg, and cinnamon.
  • Add the milk and stir up real good.
  • Pour the mixture in the pie crust.
  • Put the pie in the oven at 350°F Bake 45 minutes or 1 hour.
