Grandma's Best Ever Banana Bread is my mother-in-law's famous recipe that's everything you want in a banana bread: moist, tender, delicious and slathered with a luscious cream cheese frosting.

1/2 cup unsalted butter, softened (1 stick)
1 cup granulated sugar
2 large eggs (room temperature)
1 1/2 cups all purpose flour or gluten free flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (about 3)
1/2 cup sour cream
1 teaspoon vanilla extract
1 cup chopped nuts (optional)
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened (1/2 stick)
1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Grease 9"x5" loaf pan. Set aside.
  • Cream butter and sugar. Add eggs. Stir to combine.
  • Whisk flour, baking soda and salt together. Add to butter mixture along with sour cream, bananas, and vanilla. Stir together until completely combined. Fold in nuts.Note: If you want to make this a gluten free recipe, it works beautifully just by substituting the same amount of gluten free flour instead of the all purpose flour and adding 1/2 teaspoon xanthan gum. I used my homemade gluten free flour blend recipe from my blog.
  • Pour batter into prepared pan. Bake for 50-55 minutes or until a toothpick inserted into the middle comes out clean. Let cool.
  • Mix together cream cheese, butter, powdered sugar and vanilla until smooth and creamy. Frost cooled banana bread. Slice and serve.

This is hands down my favorite banana bread recipe and I'm posting it here for safe keeping. I got the recipe off the Cooking Light website and they give credit to Kathleen Daeleman and her book "Cooking Thin With Chef Kathleen". This bread isn't too sweet and I love the texture. If your using a darker baking pan, check the bread at about 1 hour.

2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
8 tablespoons butter, softened
1 cup sugar
4 medium overripe bananas, mashed
2 eggs
1 1/2 tablespoons yogurt or 1 1/2 tablespoons light sour cream
1 teaspoon lemon juice
1/4 teaspoon salt
1 cup chopped pecans or 1 cup walnuts

Steps:

  • Preheat oven to 350°F Grease and flour a 9x5 inch pan.
  • Sift together flour, baking powder, and baking soda.
  • In a separate bowl cream butter, sugar, then add mashed bananas.
  • Add eggs one at a time, then add sour cream or yogurt, lemon juice, salt, and nuts.
  • Add to dry ingredients and mix until just combined.
  • Bake approximately 1 hours 20 minutes Start checking with a toothpick at about 1 hour.

3 bananas, mashed

This bread recipe was from my husband's grandmother. It is so simple to make and always comes out great. The original recipe did not have the vanilla in it, but I always add it. If I have bananas that are ripe, but I am not ready to make the bread, I just plop them in the freezer, peel and all. No need to put in a bag. They will turn black, but the insides will remain good and will be perfect for the bread. Just remove from the freezer, peel and add to the mixture.

1/2 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon salt

Steps:

  • Preheat oven to 300 degrees. Grease a bread pan.
  • Cream surage and shortening. Mix in eggs and vanilla.
