GRAPE AND ROSEMARY FLATBREAD

Grape and Rosemary Flatbread image

Roasting grapes is fun and unexpected, although very popular in the wine regions of Italy. I remember being surprised to find juicy grapes cooked into a dense olive oil cake in Tuscany years ago. Here the sweetness of the grapes balances the earthy truffle oil and rosemary, and the feta adds a salty kick. The flavors are just perfect, and this flatbread takes me right back to Tuscany every time.

Yield 6 serving(s)

Number Of Ingredients 12

2 1/4 teaspoons active dry yeast (1 envelope)
2 tablespoons sugar
2 cups bread flour, plus more for rolling (bread flour needed for tenderness)
3/4 cup warm water
2 teaspoons chopped rosemary
1/2 teaspoon fine salt
1/4 teaspoon fresh ground pepper
1 1/2 cups red grapes, seedless
coarse sea salt
1/2 cup blue cheese, crumbled
1 tablespoon honey
1 tablespoon snipped chives or 1 tablespoon green onion top

Steps:

  • In a large bowl, whisk the yeast and sugar with 1/4 cup of the flour. Stir in 1/4 cup of the warm water and let stand until slightly foamy, about 5 minutes. Add the rosemary, fine salt, pepper and the remaining 1 3/4 cups of flour and 1/2 cup of water; stir until a dough forms. Turn the dough out onto a lightly floured work surface and knead until smooth, about 5 minutes. Transfer the dough to an oiled bowl, cover and let rise in a draft-free spot until billowy and doubled in bulk, about 1 hour.
  • Meanwhile, preheat the oven to 450 degrees. Place a pizza stone in the bottom of the oven, and preheat for at least 30 minutes.
  • Turn the dough out onto a lightly floured work surface. Press and stretch the dough into a 13-inch round, then transfer to a piece of lightly floured parchment paper. Press the grapes into the dough and sprinkle with sea salt.
  • Slide the flatbread with parchment onto the hot stone and bake for about 12 - 15 minutes, or until the crust is golden and the grapes have begun to release some of their juices. Sprinkle the blue cheese on top and bake for about 2 minutes longer, until the cheese melts. Slide the flatbread onto a work surface and drizzle with the honey and sprinkle with the chives. Cut into wedges and serve.

Time 35m

Number Of Ingredients 7

1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil, plus more for drizzling
1 garlic clove, minced
1 teaspoon coarse salt, plus more for seasoning
Cornmeal, for sprinkling
1 pound premade pizza dough, room temperature
1 1/2 teaspoons finely chopped fresh rosemary, plus a handful of small sprigs for topping

Steps:

  • Preheat oven to 425 degrees. In a small saucepan, heat butter and oil over medium heat. Add garlic and salt; cook, stirring, until garlic is fragrant but not browned, about 1 minute. Remove from heat; set aside.
  • Sprinkle the bottom of two rimmed baking sheets with cornmeal. Divide the dough into four equal pieces. Roll out each piece into a 1/4-inch-thick round. Arrange two rounds on each sheet. Brush with butter mixture, leaving most of the garlic behind. Sprinkle rounds with chopped rosemary; arrange a few small sprigs on top of each.
  • Bake flatbreads until golden brown, about 15 minutes. Transfer to a wire rack to cool slightly. Drizzle with oil, and season with salt. Serve warm or at room temperature.

Tips:

  • Use fresh grapes. Fresh grapes will give your flatbread a sweeter, more flavorful taste. If you don't have fresh grapes, you can use frozen grapes, but be sure to thaw them completely before using.
  • Choose a good quality rosemary. Rosemary is a key ingredient in this recipe, so it's important to use a good quality herb. Look for fresh rosemary with bright green leaves and a strong, fragrant aroma.
  • Don't overcrowd the flatbread. When you're assembling the flatbread, be sure to leave some space between the grapes and rosemary so that they can cook evenly.
  • Bake the flatbread until the crust is golden brown. The flatbread is done baking when the crust is golden brown and the cheese is melted and bubbly.
  • Let the flatbread cool slightly before slicing. This will help to prevent the cheese from oozing out.

Conclusion:

Grape and rosemary flatbread is a delicious and easy-to-make appetizer or snack. It's perfect for parties or potlucks, and it's also a great way to use up leftover grapes and rosemary. The combination of sweet grapes, savory rosemary, and creamy cheese is sure to please everyone. So next time you're looking for a quick and easy recipe, give grape and rosemary flatbread a try.
