4 ounces prosciutto, julienned
2 tablespoons unsalted butter
Roasted Garlic, recipe follows
3 tablespoons all-purpose flour
1 1/2 cups heavy cream
1 cup half-and-half
1/4 cup sherry
1 cup finely grated Parmesan, plus 1/2 cup
1 teaspoon freshly grated nutmeg
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 head garlic
1/2 teaspoon olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Peel off any damaged outer layers of Brussels sprouts. Trim the stem to make it flush. Quarter each sprout and score the stem on each quarter with a 1/4-inch-deep "X."

Steps:

4 slices bacon
1 large onion, finely chopped
1 garlic clove, minced
2 lbs Brussels sprouts, fresh (about 7 cups, halved)
1 1/2 cups milk
1 cup chicken broth
1/4 cup unsalted butter (4 tablespoons)
5 tablespoons flour
3/4 cup parmesan cheese, freshly grated
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon dried thyme
fresh ground black pepper, to taste
1 1/2 cups sharp white cheddar cheese, grated

Steps:
