Steps:
- Slice enough parsnips thinly lengthways to cover the surface of a small ovenproof dish, then slice the rest thinly into rounds. Combine the milk, cream, stock, mustard and half the cheese in a large, lidded saucepan and bring to the boil. Add a good grating of nutmeg and some seasoning - the sweet parsnips can take a bit of salt - then tip in the parsnips. When the cream is simmering again, cover and cook for 6 mins.
- Using tongs, fish out the long slices of parsnip and set aside. Tip the rest into your dish, then arrange the long slices over the top. Scatter with the rest of the cheese and another grating of nutmeg. Can be chilled for up to 24 hrs.
- To serve, heat oven to 180C/fan 160C/gas 4 and bake for 1 hr, then turn up to 200C/fan 180C/gas 6 and brown for 15 mins more - you can do this while the pie is resting.

Steps:
- Preheat oven to 350°F.
- Peel potatoes. Slice potatoes very thin with a sharp knife and put them in a medium pot with half-and-half, 2 teaspoons salt, and freshly ground white pepper. Stir well and simmer the potatoes for 15 minutes, or until they are just beginning to soften.
- Transfer potatoes and half-and-half mixture to a shallow medium casserole. The liquid should come just to the tops of the potatoes. Cover evenly with the shredded cheese. Bake for 35 to 40 minutes, or until potatoes are tender and cheese is golden brown.
Tips:
- Choose the right vegetables: For the best results, use fresh, young parsley root and parsnips. Older vegetables may be tough and woody.
- Peel the vegetables thinly: This will help them cook evenly and prevent them from becoming tough.
- Slice the vegetables evenly: This will ensure that they cook evenly and look nice when gratinated.
- Use a good quality cheese: A sharp cheddar cheese or a Gruyère cheese will give the gratin a rich, flavorful taste.
- Don't overcrowd the baking dish: Make sure there is enough space between the vegetable slices so that they can cook evenly.
- Bake the gratin until golden brown: This will ensure that the vegetables are cooked through and the cheese is melted and bubbly.
Conclusion:
A gratin of parsley root and parsnips dauphinoise is a delicious and elegant side dish that is perfect for any occasion. It is easy to make and can be customized to your own taste. With its creamy, cheesy sauce and crispy, browned top, this gratin is sure to be a hit with your family and friends.
