½ cup chopped red onion
1 tablespoon olive oil
2 cloves garlic, crushed
1 pound skinless, boneless chicken breast meat - cut into bite-size pieces
1 (14 ounce) can marinated artichoke hearts, drained and chopped
1 large tomato, chopped
½ cup crumbled feta cheese
3 tablespoons chopped fresh parsley
2 tablespoons lemon juice
2 teaspoons dried oregano
salt and pepper to taste
2 lemons, wedged, for garnish

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until tender yet firm to the bit, 8 to 10 minutes; drain.
  • Heat olive oil in a large skillet over medium-high heat. Add onion and garlic; saute until fragrant, about 2 minutes. Stir in the chicken and cook, stirring occasionally, until chicken is no longer pink in the center and the juices run clear, about 5 to 6 minutes.

1 cup sun-dried tomatoes packed in oil and Italian herbs (drained)
1 large yellow onion (sliced)
1 pound boneless skinless chicken breasts (cut into 1/2" pieces)
6 cloves garlic (sliced)
1 cup Kalamata olives (pitted and halved)
1 pound linguine pasta (uncooked)
2 teaspoons dried oregano
1 teaspoon freshly ground pepper
1 teaspoon kosher salt
8 cups baby spinach leaves (divided)
4 cups chicken stock
1 cup Chardonnay
8 ounces feta cheese (crumbled)

Steps:

  • Combine the tomatoes, onion, chicken, garlic, olives, linguine, oregano, pepper and salt with 4 cups of the spinach in a 12-inch braising pan or Dutch oven over medium-high heat. Pour the chicken stock and the wine over the top.
  • Cover and bring to a boil. Cook for 7 to 9 minutes, until the pasta is al dente (has a bite to it). Toss the pasta with tongs occasionally to keep it from sticking to the bottom of the pot. You will still have some liquid in the pan when the pasta is done cooking; this is going to make the base for our delicious cheese sauce.
  • Turn off the heat and add the cheese to the pasta. Toss the pasta with tongs until the cheese melts into the pasta. Toss in the remaining 4 cups (120 g) of spinach.

1 pound boneless (skinless chicken breast, cut into bite sized pieces)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/8 teaspoon red pepper flakes
1 Tablespoon extra virgin olive oil
1/2 lb pasta (your choice)
1/2 of a small red onion (vertically sliced)
2 garlic cloves (minced)
2 cups halved cherry or grape tomatoes
1/2 cup halved and pitted kalamata olives
Zest of one lemon
1 Tablespoon chopped fresh oregano (optional)

Steps:

  • Place chicken pieces in a large bowl. Combine salt, pepper, oregano, and red pepper flakes in a small bowl. Sprinkle seasoning over chicken, turning the pieces as needed to evenly distribute the spices.
  • Boil water. Cook pasta according to package directions until barely al dente. Do not overcook! Drain, reserving one cup of pasta water.
  • Heat oil in a Dutch oven or large pan over medium heat. Once the oil is very hot, add the chicken pieces in a single layer and cook undisturbed until golden brown. Turn, and repeat on other side of chicken until cooked through. Remove from pan and set aside.
  • Add the sliced onions and garlic to the pan and cook two minutes, adding additional oil or a splash of pasta water as needed to prevent burning. Add tomatoes and olives and cook for two minutes.
  • Transfer the browned chicken and drained pasta to the pot. Turn off the heat, then add the fresh oregano and lemon zest. Toss well; serve hot.

1/2 cup Greek yogurt
2 Tbsp lemon juice
2 tsp fresh oregano, chopped
3 boneless, skinless chicken breasts, cut into chunks
1 tsp fresh oregano, finely chopped
12 oz penne pasta
3 cups chicken broth
1/2 cup sliced kalamata olives
1 cup sliced grape tomatoes
1 Tbsp lemon juice
1/2 cup crumbled feta
1 Tbsp chopped parsley
Salt and pepper

Steps:

  • In a medium bowl, whisk together Greek yogurt, 2 Tbsp lemon juice and 2 tsp oregano. Add chicken and stir to coat. Refrigerate for 15 minutes. Heat large pan over medium heat. Add pasta, chicken, 1 tsp oregano and chicken broth. Season with salt and pepper. Bring to a boil and then reduce to a simmer. Cover and simmer for 15 minutes.
