8 ounces whole wheat penne pasta
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 (1 pound) beef rib eye steak
1 tablespoon butter
1 teaspoon minced garlic
¼ cup chopped shallots
1 tablespoon soy sauce
½ cup sun-dried tomato pesto
½ cup sliced black olives
1 cup chopped fresh spinach
1 teaspoon basil
1 tablespoon chopped parsley
½ cup crumbled feta cheese
3 tablespoons sunflower kernels

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. When cooked, drain, then toss with olive oil, and keep warm.
  • Meanwhile, melt 1 tablespoon butter in a skillet over medium-high heat. Sear the rib-eye on both sides until rosy-pink in the center, 7 to 10 minutes depending on thickness. Remove steak from skillet and cut into bite-size pieces. Melt the remaining 1 tablespoon of butter in the skillet, and stir in the garlic and shallots. Cook 5 to 10 seconds until fragrant, then return the steak to the pan and cook for another 5 minutes or to desired doneness. Stir in the soy sauce, and cook a few seconds longer, allowing it to evaporate.
  • Remove the skillet from the heat and stir in the sun-dried tomato pesto, olives, spinach, basil, parsley, feta cheese and sunflower kernels. Toss with the pasta in a large bowl and serve.

3 cups cooked small shell pasta
lettuce leaf (use as many as needed to live the plate)
1 small English cucumber, chopped (peel left on or removed)
1/2 cup kalamata olive (or brine-cured olives of choice)
1 small red onion, thinly sliced
1 (2 ounce) jar diced pimentos, drained
3/4 cup crumbled feta cheese, divided (can use more)
2 beef sirloin steaks
1 medium garlic clove, minced
3/4 cup olive oil
2 teaspoons cider vinegar
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
3 teaspoons dried oregano
1/2 teaspoon sugar
1 teaspoon seasoning salt (or use white salt)
fresh ground black pepper

Steps:

  • Combine all dressing ingredients in a processor until well combined; set half of the dressing aside and refrigerate to serve at the table.
  • In a bowl combine the cooked shell pasta with the remaining half of the dressing, then mix in cucumber, olives, sliced onion, pimientos and 1/2 cup crumbled feta cheese; toss to combine, then refrigerate while grilling the steaks.
  • Grill the steaks until desired doneness; place on a plate allow to rest for 15 minutes or more, then slice thinly.
  • Line a large platter plate with lettuce leaves.
  • Spread the pasta mixture over the leaves, then arrange the sliced steak over the pasta.
  • Sprinkle about 1/4 cup or more crumbled feta cheese over the sliced steak.
  • Serve with reserved dressing.

1/2 cup red wine vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1 clove garlic, minced or zested with a rasp grater
1/2 cup olive oil

4 boneless, skinless chicken breasts
Vegetable oil, for oiling grill grates
2 hearts romaine lettuce, halved
Vegetable oil, for oiling romaine

1 cup feta crumbles
1 cup kalamata olives, pitted and chopped

  • For the sweet Greek dressing: Whisk together the vinegar, honey, mustard, oregano and garlic in a bowl. Slowly stream in the olive oil while whisking. Add salt and pepper to taste. Measure out 1/2 cup of the dressing for marinating the chicken. Set aside the remaining dressing for drizzling on the salad.
  • For the chicken: Put the chicken in a nonreactive container, pour the reserved 1/2 cup sweet Greek dressing over it and toss to coat. Marinate the chicken, refrigerated, for 2 hours.
  • Preheat a grill to medium heat.
  • Oil the grill grates with vegetable oil. Grill the chicken until golden on each side and the internal temperature registers 165 degrees F, 7 to 8 minutes per side. Let rest before slicing.
  • For the salad: Brush each romaine half with vegetable oil and season with salt and pepper. Grill on high on the cut sides until slightly charred, 2 to 3 minutes.
  • Place a seared romaine half on a serving plate. Line up some tomatoes, feta, olives, cucumbers, onions and sliced chicken atop the romaine. Repeat with the remaining ingredients. Drizzle with the sweet Greek dressing. Garnish with cracked black pepper and sea salt and serve.

1 tablespoon A.1. steak sauce
MUSHROOMS:
1-1/2 cups sliced fresh mushrooms

1 tablespoon sherry or chicken broth

1/8 teaspoon pepper
SALAD:
4 cups torn mixed salad greens
10 cherry tomatoes, halved
2/3 cup thinly sliced cucumber
10 pitted Greek olives
1/4 cup finely chopped red onion
1/2 cup crumbled feta cheese
1/4 cup prepared balsamic vinaigrette

Steps:

  • Rub steak on both sides with steak sauce; let stand for 10 minutes., Meanwhile, in a small skillet, saute mushrooms in butter until golden brown. Add the sherry, salt and pepper. Cook 1-2 minutes longer or until liquid is evaporated. Set aside and keep warm., Lightly oil the grill rack. 1 tablespoon lemon juice
2 cloves garlic, crushed

10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil.
