An exquisite Greek dish that tantalizes taste buds with its aromatic blend of herbs and spices, Greek meat patties, known as bifteki, are a culinary delight that can be enjoyed as a main course or as part of a mezze platter. These patties are typically made with ground beef or lamb, generously seasoned with a symphony of flavors, including garlic, onion, oregano, and cumin. Whether grilled to perfection or pan-fried until golden brown, bifteki are often served with a cooling tzatziki sauce, adding a refreshing touch to the savory richness of the patties.

Steps:
- Combine the onion and water in a small saucepan, bring to a boil and simmer until liquid has evaporated, about 6 minutes. Combine the onion, meat, potato, bread crumbs, eggs, vinegar, parsley, cumin and a generous amount of salt and pepper in a large bowl. With your hands or a wooden spoon, mix until blended well. Add additional vinegar, salt and pepper to taste; the mixture should be highly flavored. Cover and refrigerate for 1 hour.
- Moisten your hands with cold water. Form the meat mixture into 3/4-inch balls, flattening each slightly between your palms, and lightly dredge with flour.
- To fry, pour 1/4 inch of olive oil into a heavy skillet over medium-low heat. When the oil is hot but not smoking, add the first batch of patties; they should fit comfortably in a single layer. Fry until golden brown on both sides and cooked through. Drain between two layers of paper towels. Repeat with the remainder. If you prefer to bake the patties instead of frying them, heat the oven to 325 degrees, and warm two or more heavy baking sheets. Brush the sheets with olive oil, and arrange the patties 1 inch apart. Lightly brush the patties with olive oil, and bake 20 to 25 minutes, turning once. Drain between two layers of paper towels.
- To serve, arrange the patties on a platter; sprinkle with lemon juice.

Plus, I'm showing you how to make my new favorite thing to eat, which is whipped feta. Serve with grilled red onion and red bell pepper if you like, and garnish with Greek olives.

Tips:
- Choose the right mince: For the best results, use a combination of beef and pork mince. This will give your patties a juicy and flavorful texture.
- Season your mince well: Don't be afraid to use plenty of herbs and spices to flavor your patties. Some classic Greek seasonings include oregano, thyme, garlic, and cumin.
- Handle your mince gently: Overworking the mince will make your patties tough. Mix it just until the ingredients are combined, then form it into patties.
- Cook your patties over medium heat: This will help them cook through evenly without burning.
- Let your patties rest before serving: This will help them retain their juices and flavor.
Conclusion:
Greek meat patties, also known as bifteki, are a delicious and versatile dish that can be enjoyed in many different ways. Whether you serve them in a pita bread with tzatziki sauce, or on a plate with roasted vegetables, these patties are sure to be a hit. So next time you're looking for a tasty and satisfying meal, give bifteki a try!
