GREEK PITA PIZZAS
Pita bread is the crust for these single-serving pizzas that get Mediterranean flair from olives, spinach and feta cheese. Breadsticks and a wedge of iceberg lettuce drizzled with salad dressing (pictured above right) make fine pizza partners. Or serve an appetizer of fresh vegetables with dip, then cap off the meal with lemon Italian ice.

GREEK VEGETABLE PIZZA
I love the garlicky flavor of this "White" (versus classic "Red") vegetable pizza. It is easier to serve (less messy) as an appetizer than a tomato-based pizza.

Steps:
- Halve the pita loaves horizontally to form 4 rounds, arrange the rounds, rough sides up, on a baking sheet, and brush the tops lightly with the additional oil. Sprinkle the rounds with salt to taste and toast them in the middle of a preheated 350°F. oven for 5 minutes, or until they are pale golden and crisp. Sprinkle half the mozzarella onto the rounds and bake the rounds for 1 minute, or until the mozzarella is melted. While the rounds are toasting, in a large skillet cook the onion and the garlic in the remaining 3 tablespoons oil over moderately low heat, stirring, until the onion is softened, add the bell peppers, and cook the mixture, stirring, for 4 minutes, or until the peppers are softened. Add the zucchini, the mushrooms, the oregano, and salt and pepper to taste and cook the mixture, stirring, for 2 minutes, or until the zucchini is softened. Stir in half the remaining mozzarella and divide the mixture among the rounds, mounding it slightly. Top the rounds with the remaining mozzarella, the tomato, the basil, and the Parmesan and broil the rounds under a preheated broiler about 4 inches from the heat for 3 minutes, or until the cheeses are melted and bubbly.
Tips:
- Choose the right pita bread: Look for pita bread that is soft and pliable, not dry or brittle. You can find pita bread in the bakery section of most grocery stores.
- Prepare the vegetables ahead of time: Chop the vegetables and store them in airtight containers in the refrigerator up to 2 days in advance. This will save you time when you're ready to assemble the pizzas.
- Use a variety of toppings: Don't be afraid to experiment with different toppings. Some popular options include grilled chicken, roasted vegetables, fresh herbs, and feta cheese.
- Don't overload the pizzas: Too many toppings will make the pizzas soggy. Stick to a thin layer of sauce, cheese, and toppings.
- Cook the pizzas until the cheese is melted and bubbly: This will take about 10-12 minutes in a preheated oven.
Conclusion:
Greek pita veggie pizzas are a delicious and easy meal that can be enjoyed by people of all ages. With a variety of toppings to choose from, there's a pizza for everyone. So next time you're looking for a quick and healthy meal, give Greek pita veggie pizzas a try. You won't be disappointed!
