1 medium onion, chopped

2 Cornish game hens, split (approximately 3 pounds total)
2 halves lemon confit (also known as preserved lemon), chopped, for garnish
15 olives, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the ginger, saffron, olive oil, onion, and garlic together. Heat a large saute pan over medium-high heat. Add the oil mixture and cook until the onions soften, about 8 minutes.

1 tablespoon snipped fresh oregano
2 teaspoons olive oil
3 garlic cloves, minced
1 teaspoon snipped fresh thyme

1 (9 ounce) package frozen artichoke hearts, thawed
8 ounces small potatoes or 8 ounces tiny new potatoes, quartered
3 lbs Cornish hens
lemon slice (optional)

Steps:

  • Preheat oven to 450 degrees F.

2 Cornish hens, cut into fourths

1 cup green Greek olive
1/2 preserved lemon, rind of, cut into 1/2 thick slices

Steps:

  • Preheat oven to 350º.

1/4 cup sun-dried tomato (not oil packed)
1/3 cup of fresh mint, chopped
1/4 cup kalamata olive, pitted and chopped
1/4 cup golden raisin
2 garlic cloves, chopped
1/2 teaspoon lemon zest
1/4 teaspoon salt
2 Cornish hens, halved

Steps:

  • Preheat the oven to 425. In a small saucepan bring 1 cup of water to boil. Add the sun-dried tomatoes and cook for 5 minutes to blanch.
  • Reserving 2 tablespoons of the cooking liquid, drain the tomatoes. Place the reserved cooking liquid in a medium bowl. When cool enough to handle, coarsely chop the sun-dried tomatoes and add them to the bowl.
