Shredded Green Chile Beef image

This Tex-Mex pulled beef roast is tender, slightly spicy, juicy, and so delicious served over mashed potatoes or rice. The beef also makes the best soft tacos you've ever had. Save any leftover pulled beef in the liquid to prevent it from drying out. -Colleen Delawder, Herndon, Virginia

MOM'S SWISS STEAK DINNER

Mom's Swiss Steak Dinner image

Comfort food all the way. I love swiss steak with fresh green beans, white rice and good crusty bread!!

Provided by babygirl65

Categories     One Dish Meal

Time 2h

Yield 4-6 serving(s)

Number Of Ingredients 12

2 lbs beef chuck steaks, 1-inch thick, trimmed
1 medium onion, sliced
1 bell pepper, sliced
1 (10 ounce) can cream of mushroom soup
1 (14 ounce) can stewed tomatoes
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
8 small new potatoes, unpeeled and quartered
1 (9 ounce) package green beans, frozen, fresh

Steps:

  • Heat oven to 425. Line 9 x 13 baking pan with heavy-duty aluminum foil, leaving 1 1/2 inch overhang all around.
  • Cut steaks into equal portions and place in prepared pan. Top with sliced onions and bell peppers. (I always use more onion and bell peppers, personal preference).
  • Whisk together soup, tomatoes with juice, Worcestershire sauce, thyme, salt, garlic powder, and pepper in a bowl until well blended. Pour over steaks, onions and bell peppers.
  • Cover pan with large sheet of heavy duty foil; roll edges tightly with overhang to seal.
  • Bake at 425 for 45 minutes.
  • Add potatoes; reseal with foil. Bake additional 45 minutes.
  • Uncover pan; add green beans. Reseal.
  • Bake an additional 15 minutes or until beans are tender and steak is cooked through.
  • Stir well before serving.

Tips:

  • Select high-quality beef chuck steak for a tender and flavorful result.
  • Tenderize the steak by pounding it with a meat mallet or using a fork to poke holes in it.
  • Use a well-seasoned cast iron skillet or a heavy-bottomed pot to sear the steak, as this will create a nice crust and lock in the juices.
  • Cook the steak over medium-high heat, searing it for 2-3 minutes per side or until golden brown.
  • Don't overcrowd the pan, as this will prevent the steak from searing properly.
  • Use a meat thermometer to ensure the steak is cooked to your desired doneness. The internal temperature should reach 145°F for medium-rare, 160°F for medium, or 170°F for well done.
  • For the green chile sauce, use a combination of fresh and roasted green chiles for a more complex flavor.
  • Add some chopped onions, garlic, and spices to the green chile sauce for extra flavor.
  • Simmer the steak in the green chile sauce for at least 1 hour, or until the meat is fall-apart tender.
  • Serve the green chile swiss steak over mashed potatoes, rice, or noodles, and top with additional green chile sauce and shredded swiss cheese.

Conclusion:

Green chile swiss steak is a delicious and comforting dish that is perfect for a family meal or a special occasion. With its tender beef, flavorful green chile sauce, and melted swiss cheese, this dish is sure to be a hit. By following these tips, you can make a delicious and authentic green chile swiss steak that will impress your family and friends.
