Steps:
- To die your eggs green, first separate the yolks from the whites. Do it carefully so that your yolk remains in tact. I put each component into a separate bowl. So for those 2 eggs I used 4 bowls.
- add a couple drops of green food coloring to the egg whites and whisk it in until the coloring is well incorporated. Carefully slide the egg yolk back onto the egg white.
- Melt a tablespoons or two of butter in a skillet over medium heat.
- Slide the egg onto the skillet. Cover with a lid or aluminum foil. Reduce heat to medium-low and cook for about 2 minutes.
- It is done when the whites are completely set on top around the yolk. If you want the yolk to set as well, just reduce the heat all the way to low and cook a couple minutes longer.

Steps:
- Place 2 eggs in a saucepan, cover with water and bring to a boil. Cook 8 to 10 minutes. Cool in a bowl of ice water. Peel the eggs, then separate the whites and chop them. Mash the yolks in a bowl, then whisk in 2 tablespoons warm water, the pickling liquid and mustard. Gradually whisk in the olive oil. Add 2 tablespoons parsley, the chives, tarragon, egg whites, pickles, 1/4 teaspoon salt, and pepper to taste.
- Combine the flour, the remaining 6 tablespoons parsley and a pinch of pepper in a shallow dish. In another dish, beat the remaining egg with the milk. Dip each piece of ham in the flour to coat both sides, then dip in the milk mixture and re-dip in the flour mixture.
- Heat 1/8 inch of olive oil in a large skillet over medium-high heat until sizzling. Fry the ham in batches until golden, about 4 minutes per side. Transfer to a paper-towel-lined plate. Fry the capers in the skillet until crisp, about 1 minute. Sprinkle the ham steaks with the capers, and serve the egg mixture on the side to spoon on top.

Steps:
- Halve and seed the honeydew melons. Cut 2 (1/4-inch) slices from each honeydew melon half. Shape the honeydew slices to look like the egg white of a sunny-side-up egg. Slice the cantaloupe in half and use a melon scoop or a measuring tablespoon to carve out 4 "yolks".
- Trim the melon balls to resemble yolks. Assemble "eggs" and position 2 strips of prosciutto "bacon" alongside them. Garnish with parsley and serve immediately, or refrigerate. For the best contrast, use solid-color plates that are neither white nor yellow.

Steps:
- Directions: Note: This isn't exactly a healthy meal, but it's not that bad either. Polyunsaturated fats, whee! If you use the Nasoya, the tofu will be slightly greenish and of course the avocado is green. If you prefer you can use a different tofu scramble mix. I like Fantastic Foods, personally. Heat the oil in a large skillet, and add the potatoes. Let them get good and homefry-ish, meanwhile drain and crumble the tofu, mix the seasoning packet, and dice the avocado. *Add your diced vegetables _EXCEPT_ the avocado when the potatoes are getting close to being done and make sure they get the right amount of cooking time, to taste.* When the potatoes are golden brown and crispy, add the tofu. Pour the seasoning mix over it and stir. Cook a few more minutes, remove from skillet, and add the avocado. I love this with Frank's red hot. The times and amounts aren't exact cause I go by how it looks, smells, and tastes as I go along. If you have any suggestions, please post them in comments :) "I do not like green eggs and ham. Tips:
- Use firm tofu for the eggs. Extra firm or firm tofu will give you the best texture for your vegan eggs.
- Press the tofu before cooking. This will help to remove excess moisture and give the tofu a more firm texture.
- Crumble the tofu finely. This will help it to cook more evenly and give it a more realistic egg-like texture.
- Use a non-stick skillet. This will help to prevent the tofu from sticking and breaking apart.
- Cook the tofu over medium heat. This will help to prevent it from burning.
- Stir the tofu frequently. This will help to prevent it from sticking to the pan and will also help it to cook more evenly.
- Season the tofu to taste. You can use salt, pepper, garlic powder, onion powder, or any other spices that you like.
- Serve the tofu immediately. Vegan eggs are best served fresh and hot.
