This papaya salad is light and refreshing. I can easily eat a giant bowl of it and be completely satisfied. And as an extra bonus, this salad is pretty healthy. I sometimes add extra chiles because I enjoy a lot of heat. That's what is great about this recipe, it is easily customized to suit individual tastes.

Tips:

  • Use a sharp knife or mandoline to slice the green mango and papaya thinly. This will help them absorb the dressing better.
  • If you can't find green mangoes, you can use ripe mangoes instead. Just be sure to use firm, unripe mangoes so that they hold their shape in the salad.
  • If you don't have fish sauce, you can substitute soy sauce or tamari. However, fish sauce will give the salad a more authentic Thai flavor.
  • Be sure to taste the dressing before adding it to the salad. You may need to adjust the amount of fish sauce, lime juice, or sugar to suit your taste.
  • Serve the salad immediately after making it. The flavors will meld together and the salad will be at its best.
