BACON AND SCALLION CORN MUFFINS

Bacon and Scallion Corn Muffins image

Provided by Giada De Laurentiis

Categories     side-dish

Time 50m

Yield 12 muffins

Number Of Ingredients 12

1 teaspoon hot sauce
8 ounces (about 8 slices) applewood-smoked bacon, cut into 1/3-inch pieces
1 1/3 cups buttermilk, at room temperature
2 large eggs, at room temperature
1 1/3 cups yellow cornmeal (about 7 ounces)
1 1/3 cups all-purpose flour (6 to 6 1/2 ounces)
1/3 cup sugar
1 tablespoon baking powder
3/4 teaspoon fine salt
1/4 teaspoon freshly ground black pepper
1 1/2 sticks chilled unsalted butter, cut into 1/2-inch cubes
5 large scallions (green onions), chopped

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a standard 12-cup muffin pan with paper liners.
  • In a large nonstick skillet, cook the bacon, over medium heat until crisp and brown. Transfer the bacon to paper towels; drain and cool.
  • In a large bowl, whisk together the buttermilk, hot sauce and eggs. Combine the cornmeal, flour, sugar, baking powder, salt and pepper in a food processor. Drop in the cold butter cubes. Using on/off turns, blend until the butter is cut in finely and the mixture resembles a coarse meal. Pour the dry ingredients over the buttermilk mixture. Scatter the bacon and green onions over the batter. Using a thin, flexible spatula, fold the batter together, scraping up the liquids from the bottom each time and turning the bowl as you fold. Do not over-fold; some dry patches are fine. Using a rounded 1/3 cup of batter for each muffin, fill the paper liners.
  • Bake until puffed and browning at edges, and a tester inserted into the center comes out clean, 18 to 20 minutes. Let the muffins stand 5 to 10 minutes. Twist each muffin in place to loosen the edges from the pan. Lift the muffins out onto a rack and cool.

GARLIC-ONION DINNER MUFFINS

Garlic-Onion Dinner Muffins image

This muffin makes a perfect bread accompaniment for steaks and roast. The recipe comes from " A taste of Cuba" and was sent to me.

Provided by Barb G.

Categories     Quick Breads

Time 35m

Yield 12 Muffins

Number Of Ingredients 9

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1 egg, beaten
1 cup milk
1/4 cup melted butter
2 garlic cloves, minced
1 medium onion, diced

Steps:

  • Heat oven to 400°F.
  • In a large bowl, mix flour, baking powder, salt and sugar.
  • In a small bowl, mix together egg, milk, garlic and onion.
  • Make a well in the center of dry ingredients and pour in the egg mixture and melted butter.
  • Mix together using as few strokes as possible.
  • DO NOT OVER BEAT--the batter should have small lumps in it.
  • Pour into 12 paper-lined muffins tins, filling about 2/3 full.
  • Bake 20 minutes or until muffins begin to turn golden on top.
  • Test for doneness with a toothpick which should come out clean.
  • Remove from tins and cool slightly before serving.

Tips:

  • Use fresh green onions: Fresh green onions have a more vibrant flavor than dried or frozen onions. If you don't have fresh green onions, you can substitute 1/4 cup chopped yellow onion.
  • Toast the sesame seeds: Toasting the sesame seeds brings out their nutty flavor. You can toast them in a dry skillet over medium heat for a few minutes, or you can spread them on a baking sheet and bake them at 350 degrees Fahrenheit for 5-7 minutes.
  • Use a good quality cornmeal: A good quality cornmeal will have a coarse texture and a nutty flavor. Avoid using cornmeal that is too fine, as it will make the muffins too dense.
  • Do not overmix the batter: Overmixing the batter will make the muffins tough. Stir the ingredients just until they are combined.
  • Fill the muffin cups almost to the top: This will help the muffins to rise evenly.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.

Conclusion:

Green onion and sesame corn muffins are a delicious and easy-to-make snack or side dish. They are perfect for potlucks, picnics, or lunch boxes. With their fresh green onion flavor, toasted sesame seeds, and nutty cornmeal, these muffins are sure to be a hit with everyone who tries them. So next time you are looking for a quick and easy recipe, give these green onion and sesame corn muffins a try.
