2/3 cup heavy cream
3 tablespoons unsalted butter
2/3 cup buttermilk

4 ounces sharp Cheddar cheese, grated
4 eggs, separated
1/4 cup finely chopped green onions, green and white parts
1 teaspoon chopped fresh thyme leaves

1-2 tbsp vegetable oil
