Time 30m

Yield 4 serving(s)

Number Of Ingredients 10

4 boneless skinless chicken breasts, thawed
1 pinch salt
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
8 slices fresh mozzarella cheese
4 roma tomatoes, seeded and diced
8 fresh basil leaves, stacked, rolled and thinly sliced into chiffonade
3 fresh garlic cloves, minced
1 pinch salt
1 tablespoon balsamic vinegar

Steps:

  • Preheat a grill pan over medium heat on the stove top. Spray with cooking spray. Combine balsamic and olive oil in a bowl. Season both sides of chicken with pinches of salt and place on grill. Brush top sides of chicken with balsamic mixture. Cook for 4-5 minutes and flip chicken. Brush with additional balsamic and cook for an additional 4-5 minutes or until cooked through. During the last 2 minutes of grilling place 2 slices of cheese over top each chicken to melt.
  • In a large bowl combine the tomatoes, basil garlic, salt and balsamic. Toss gently to combine. Place chicken breasts on a serving plate and top with tomato mixture. Serve warm.

Tips:

  • Use high-quality ingredients: Fresh, flavorful tomatoes and crusty bread are essential for this dish. Look for ripe tomatoes that are in season, and use a good quality olive oil and balsamic vinegar. Using high-quality ingredients will make a big difference in the overall taste of the dish.
  • Don't overcrowd the grill: When grilling the chicken, make sure to leave enough space between the pieces so that they can cook evenly. Overcrowding the grill will prevent the chicken from cooking properly.
  • Use a meat thermometer: To ensure that the chicken is cooked through, insert a meat thermometer into the thickest part of the breast. The chicken is done when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest: Once the chicken is cooked, let it rest for a few minutes before slicing. This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.
  • Assemble the bruschetta just before serving: To prevent the bread from getting soggy, assemble the bruschetta just before serving. Drizzle the bread with olive oil and balsamic vinegar, and top with the chicken, tomatoes, basil, and cheese.

Conclusion:

Grilled bruschetta chicken is a delicious and easy-to-make dish that is perfect for a summer meal. The combination of grilled chicken, fresh tomatoes, and basil is a classic flavor combination that is sure to please everyone. This dish can be served as an appetizer or main course, and it is also a great option for a picnic or potluck. So next time you're looking for a quick and easy meal, give grilled bruschetta chicken a try. You won't be disappointed!
