I love this recipe because of the depth of flavors and burst of colors. It's quick and easy to make. It's best when peaches are in season, but you could try strawberries or pineapple instead. -Holly Bauer, West Bend, Wisconsin

1 tablespoon dark brown sugar
2 teaspoons ground coriander
2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon kosher salt
3/4 teaspoon ground ginger
1/2 teaspoon ground turmeric
3/4 medium pineapple, peeled cored, and cut into small dice (about 2 cups)
4 large radishes, trimmed and cut into small dice (about 3/4 cup)

1 small jalapeno, cut into small dice (optional)
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice, more to taste
kosher salt
fresh ground black pepper
6 boneless chicken breasts (pounded lightly to about 3/4 inches thick) or 6 turkey breast cutlets
1 1/2 tablespoons canola oil or 1 1/2 tablespoons vegetable oil

Steps:

  • MAKE THE SPICE RUB:.
  • In a small bowl, mix the brown sugar, coriander, cumin, garlic powder, salt, ginger, and turmeric.
  • MAKE THE SALSA:.
  • In a medium bowl, mix the pineapple, radishes, bell pepper jalapeno, cilantro, lime juice, and 1/4 teaspoons each kosher salt and pepper.

  • Grill the meat (uncovered for charcoal; covered for gas) over direct heat on the hottest part of the grill, taking care not to crowd the meat.
  • Cook until the meat forms impressive grill marks on one side, 2 to 3 minutes.
  • Turn and continue to grill (uncovered for charcoal; covered for gas) until the meat is just firm to touch and just cooked through, 1 to 2 minutes for turkey cutlets; 3 to 4 minutes for pork chops and chicken breasts, depending on their thickness. (If grilling pork, watch out for flare-ups.)
  • Transfer to a serving platter and let rest for 5 minutes.
  • Serve with the paired salsa spooned alongside or over the meat.
  • Drink Suggestions.
  • If you're grilling chicken or turkey, try a crisp, fruity New Zealand Sauvignon Blanc, like the Kim Crawford Marlborough. If you grill pork, try a fruity red, like the Rosemount Estate Diamond Label Shiraz-Grenache.

GRILLED PORK TENDERLOIN WITH SPICY PEACH GLAZE

Grilled Pork Tenderloin With Spicy Peach Glaze image

A friend gave me this recipe and said it was from Martha Stewart. The original recipe calls for chicken, but I use it for pork tenderloin. I am sure it would be great on chicken as well. Super easy, moist and flavorful.

Provided by Epi Curious

Categories     Pork

Time 45m

Yield 2 tenderloins, 8 serving(s)

Number Of Ingredients 11

1 cup peach preserves or 1 cup jam
1 teaspoon garlic, minced
2 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon soy sauce
1 tablespoon dry mustard
1/4 teaspoon cayenne pepper
1 teaspoon salt, plus more to taste
1/4 teaspoon fresh ground black pepper, plus more to taste
2 lbs pork tenderloin
4 ripe peaches, cut in half and pitted

Steps:

  • Heat the grill to medium hot.
  • In a medium mixing bowl, combine the preserves, garlic, olive oil, soy sauce, dry mustard, cayenne pepper, salt and black pepper, and mix well to combine.
  • Sprinkle the tenderloins with additional salt and pepper and place on the grill. Cook about 10 minutes on each side before brushing the upturned side with the glaze. Continue cooking for another 10 to 12 minutes, turning every 3 to 5 minutes and brushing each upturned side with glaze every time, until the meat is cooked through. Move the pork to a cooler part of the grill if it starts to get too dark before it is cooked through.
  • Place the peach halves on the grill, cut-side down, and grill 2 minutes. Turn, and brush the tops with the glaze. Grill 3 ro 5 minutes more, until the peaches are soft and the cavities fill with juices. Transfer the cooked pork and peaches to a serving plate & serve immediately.

Tips:

  • For a more flavorful pork tenderloin, marinate it in the Caribbean spice rub for at least 30 minutes, or up to overnight.
  • To ensure that the pork tenderloin is cooked evenly, use a meat thermometer to check the internal temperature. It should read 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 165 degrees Fahrenheit for well-done.
  • If you don't have a grill, you can also cook the pork tenderloin in a skillet over medium heat. Just be sure to sear it on all sides before reducing the heat to low and cooking it through.
  • The peach salsa is a great way to add a sweet and tangy flavor to the pork tenderloin. If you don't have fresh peaches, you can use frozen or canned peaches instead.
  • Serve the pork tenderloin with your favorite sides, such as rice, beans, or vegetables.

Conclusion:

Grilled Caribbean Spiced Pork Tenderloin with Peach Salsa is a delicious and easy-to-make dish that is perfect for a summer cookout. The pork tenderloin is marinated in a flavorful spice rub and then grilled to perfection. The peach salsa adds a sweet and tangy flavor to the dish. This dish is sure to be a hit with your family and friends.
