1 large yellow onion, roughly chopped
1/2 cup Dijon mustard
1/2 cup rice vinegar
1/2 cup soy sauce
6 garlic cloves, peeled
2 tablespoons sesame oil
2 tablespoons brown sugar
2 teaspoons lemon zest
2 tablespoons lemon juice
1/2 teaspoon black pepper, freshly ground
8 boneless skinless chicken breasts

Steps:

  • Place all but the chicken breasts in a food processor or blender. Process until smooth.
  • Place chicken breasts in a resealable plastic bag and pour in half the marinade. Freeze remaining marinade.
  • Refrigerate chicken for 4 to 6 hours, turning once or twice.
  • Remove breasts from the bag, discarding marinade. Grill on medium heat until cooked through.
  • The marinade may also be used for wings baked in the oven.

2 teaspoons nonfat dry milk powder
1/4 teaspoon pepper
Vegetable oil spray

Steps:

  • Serves 4 1. Dissolve salt and sugar in 1½ quarts cold water. Submerge chicken in brine, cover, and refrigerate for at least 30 minutes or up to 1 hour. Remove chicken from brine and pat dry with paper towels. Combine milk powder and pepper in bowl. 2A. FOR A CHARCOAL GRILL: Open bottom vent completely. Light large chimney starter mounded with charcoal briquettes (7 quarts). When top coals are partially covered with ash, pour two thirds evenly over half of grill, then pour remaining coals over other half of grill. Set cooking grate in place, cover, and open lid vent completely. Heat grill until hot, about 5 minutes. 2B. FOR A GAS GRILL: Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Leave primary burner on high and turn other burner(s) to medium-high. 3. Clean and oil cooking grate. Onion Jam
Salt and freshly ground black pepper
1/2 cup dry white wine
1 3/4 cups Homemade Chicken Stock, or low-sodium canned chicken broth, skimmed of fat
2 tablespoons balsamic vinegar
Olive-oil cooking spray

Steps:

  • Place each piece of chicken between two 12-inch squares of plastic wrap. Using a meat pounder, pound to a 1/4-inch thickness.
