GRILLED HERBED POTATOES AND SHALLOTS

Grilled Herbed Potatoes and Shallots image

When put directly on the grill, potatoes will burn before they are cooked through. Parboiling potatoes and wrapping them in a foil packet with seasonings allows for perfectly grilled potatoes with lots of golden, flavorful bits.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 6

2 1/2 pounds small new potatoes
Coarse salt
4 tablespoons extra-virgin olive oil
8 shallots, halved
12 sprigs oregano
Freshly ground pepper

Steps:

  • Place potatoes in a large saucepan, and fill with enough cold water to cover them by 2 inches. Bring to a boil over high heat, and add salt. Reduce heat; simmer until potatoes are slightly tender when pierced with a fork (but not cooked through), about 10 minutes. Drain; let stand until cool enough to handle. Cut each potato in half.
  • Heat grill to high. Overlap two pieces of foil, each about 3 feet long, to form a cross. Place the potatoes in one layer in center of cross. Drizzle the potatoes with 2 tablespoons oil; add the shallots and oregano; season with salt and pepper. Fold foil, enclosing the potatoes, and seal edges by crimping.
  • Place foil packet on grill, and cook, shaking packet occasionally with tongs, until potatoes are cooked through and golden brown, about 20 minutes, depending on heat of grill. Remove packet from grill, carefully, watching for any steam and hot oil that might escape. Transfer potatoes to a serving bowl. Drizzle with remaining 2 tablespoons oil, and adjust seasoning as desired.

Time 1h5m

Yield 6 to 8 servings

Number Of Ingredients 16

2 pounds baby red potatoes, skin on
3 cloves garlic
Kosher salt
2 tablespoons minced fresh parsley
1 tablespoon minced fresh dill
1 tablespoon minced fresh tarragon
1 Fresno chile, seeds removed and finely chopped (about 1 tablespoon)
1 tablespoon minced fresh chives
2 tablespoons finely-minced shallot
2 tablespoons chardonnay vinegar
1 tablespoon lemon juice, plus additional to taste
1 tablespoon whole-grain mustard
1/2 teaspoon honey
1/4 teaspoon kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • For the potato salad: Place the potatoes and whole garlic cloves in a large pot and cover by 2 inches with cold water. Season the water liberally with salt. Bring the potatoes to a simmer over medium heat and cook until fork-tender, 20 to 25 minutes. Drain the potatoes and garlic in a colander. Transfer to a sheet tray or cutting board. Gently press each potato and garlic clove to smash them and set them aside in a bowl, covering the bowl with aluminum foil to keep the potatoes warm.
  • For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lemon juice, mustard, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.
  • Add the warm potatoes to the vinaigrette and toss to combine. Add the parsley, dill and tarragon to the potatoes. Toss to coat, seasoning with additional lemon juice and salt to taste. Transfer to a serving bowl and garnish with the Fresno chile and chives. Serve at room temperature or keep covered in the refrigerator overnight, tossing again before serving.

Categories     side-dish

Time 1h40m

Yield 12 servings

Number Of Ingredients 8

2 sticks butter, softened, plus more for the baking dish
5 pounds russet or Yukon gold potatoes
Vegetable oil, for frying
2 pounds shallots, thinly sliced into rings
8 ounces cream cheese, softened
1 cup heavy cream
1/2 to 1 teaspoon seasoned salt
Kosher salt and freshly ground pepper

Steps:

  • Generously butter a 4-quart baking dish. Peel the potatoes and cut into chunks. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork-tender, 20 to 25 minutes.
  • Heat 1/2 inch vegetable oil in a large pot over medium-high heat. Working in batches, fry the shallots until they are slightly golden, 3 to 4 minutes. Remove with a slotted spoon and drain on paper towels.
  • Drain the potatoes in a large colander. Place them back in the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all the steam to escape before adding in the other ingredients. Turn off the heat and add 1 1/2 sticks butter, the cream cheese, heavy cream, seasoned salt, 1/2 teaspoon kosher salt and 1 teaspoon pepper. Mash to combine.
  • Preheat the oven to 350 degrees F. Spread three-quarters of the shallots in the bottom of the baking dish. Scoop the mashed potatoes on top and spread them over the shallots. Sprinkle the remaining shallots on top of the potatoes.
  • Cut the remaining 1/2 stick butter into pieces and sprinkle over the potatoes. Bake until the butter is melted and the potatoes are warmed through, 25 to 30 minutes.
  • The potatoes can be made a day ahead through the end of step 4; cover and refrigerate. Before serving, dot with butter and bake for an hour.

GRILLED HERB POTATOES

Grilled Herb Potatoes image

This is a very simple, but very delicious recipe that I came up with when it was summer time, we wanted to grill out, and the only vegetable I had on hand was potatoes. This ended up being a constant request as a side dish to our grilled meats.

Provided by SaffronMeSilly

Categories     Potato

Time 25m

Yield 6 serving(s)

Number Of Ingredients 8

7 medium red potatoes (or yellow potatoes. A mix of the two is fine)
3 tablespoons olive oil
2 teaspoons basil
2 teaspoons parsley
1 teaspoon marjoram
1 teaspoon tarragon (you can substitute oregano, if it is preferred)
1 teaspoon kosher salt
1 teaspoon black pepper

Steps:

  • Wash potatoes and cut into 1/2 inch squares.
  • In a large bowl or large ziplock bag, coat potatoes with oil and spices. Shake bowl to evenly coat potatoes.
  • Preheat grill to medium heat.
  • Line a wire grilling basket or grilling wok with nonstick aluminum foil.
  • Spread evenly over basket.
  • Cook potatoes for 15-20 minutes or until tender (be sure to shake or stir the potatoes regularly to prevent burning).

Tips:

  • Choose the right potatoes: For this recipe, small or medium-sized potatoes work best. Avoid using large potatoes as they take longer to cook and may not cook evenly.
  • Scrub the potatoes well: Before boiling the potatoes, scrub them thoroughly to remove any dirt or debris. This will help the potatoes cook evenly and prevent the skins from splitting.
  • Boil the potatoes until fork-tender: To ensure that the potatoes are cooked through, boil them until they are fork-tender. This usually takes about 10-15 minutes, depending on the size of the potatoes.
  • Do not overcook the potatoes: Once the potatoes are fork-tender, remove them from the boiling water immediately. Overcooking can make the potatoes mushy.
  • Use fresh herbs: Fresh herbs, such as rosemary, thyme, and parsley, add a lot of flavor to this recipe. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Don't overcrowd the pan: When grilling the potatoes and shallots, make sure not to overcrowd the pan. This will prevent them from cooking evenly.
  • Serve immediately: Grilled herbed potatoes and shallots are best served immediately. Leftovers can be stored in the refrigerator for up to 3 days.

Conclusion:

Grilled herbed potatoes and shallots are a delicious and easy-to-make side dish that is perfect for any occasion. The potatoes are tender and flavorful, and the herbs and shallots add a delicious savory flavor. This dish is sure to be a hit with your family and friends.
