HOISIN BURGERS WITH GRILLED SCALLIONS AND SRIRACHA-SESAME MAYO

Hoisin Burgers with Grilled Scallions and Sriracha-Sesame Mayo image

Pantry staples like hoisin, Sriracha and sesame oil lend sweet, spicy, nutty notes to grilled burgers.

Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds ground beef, preferably chuck
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
1/4 cup hoisin sauce
6 scallions
1/2 teaspoon sesame oil, plus more for brushing
4 sesame buns, split
1/2 cup mayonnaise
1 teaspoon Sriracha (Asian chile sauce)
12 thin slices cucumber

Steps:

  • Preheat a grill to medium high. Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. During the last minute of grilling, brush the patties with the hoisin sauce. Remove the patties to a plate and let rest 5 minutes.
  • Meanwhile, brush the scallions with sesame oil, season with salt and grill, turning occasionally, until charred and tender, 3 to 4 minutes. Cut into 4-inch pieces. Grill the buns, cut-side down, until lightly toasted, about 1 minute.
  • Mix the mayonnaise, Sriracha and sesame oil in a small bowl and spread on the buns. Top the bun bottoms with the cucumber, burger patties and scallions, then cover with the bun tops.

GRILLED HOISIN BEEF

Grilled Hoisin Beef image

The (underrated) hoisin sauce is a thickened, fermented soy-sauce-like substance, flavored with chilies, garlic, vinegar, sugar, and, of course, exotic spices. It makes a great marinade. And unless you horribly overcook it, this skirt steak is juicy and tender.

Yield 2

Number Of Ingredients 13

1 (1 pound) beef skirt steak
⅓ cup hoisin sauce
3 tablespoons Chinese vinegar (or sherry vinegar)
1 tablespoon soy sauce
2 teaspoons hot sauce
2 teaspoons sesame oil
1 tablespoon grated fresh ginger root
4 cloves garlic, finely minced
1 tablespoon packed brown sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 green onion, light parts only, minced
Toasted sesame seeds

Steps:

  • Whisk hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper together in a large mixing bowl.
  • Cut skirt steak crosswise into about 4 or 5 smaller pieces. Transfer steak into marinade and toss until all pieces are evenly coated. Cover with plastic wrap. Refrigerate; marinate at least 2 hours and up to 12 hours.
  • Line a baking pan with paper towels. Transfer pieces of steak to the paper towels and mop off some of the marinade.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Transfer steak pieces to grill. Cook to medium rare or medium, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read between 130 and 135 degrees F (about 54 degrees C). Thinner pieces might finish earlier. Transfer steak to a warm plate. Let rest for a few minutes.
  • Transfer steak to a warm serving platter and pour any accumulated juices over skirt steak. Sprinkle with sesame seeds and sliced green onions.

Tips:

  • Choose the right cut of beef: A flank steak or skirt steak works well for this recipe. These cuts are relatively thin and have a good amount of marbling, which will help them stay tender when grilled.
  • Marinate the beef: Marinating the beef in the hoisin sauce mixture will help to tenderize it and add flavor. You can marinate the beef for as little as 30 minutes or up to overnight.
  • Grill the beef over high heat: This will help to sear the outside of the beef and lock in the juices. Cook the beef for about 3-4 minutes per side, or until it is cooked to your desired doneness.
  • Let the beef rest before slicing: Let the beef rest for a few minutes before slicing. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • Serve with your favorite sides: Grilled hoisin beef can be served with a variety of sides, such as rice, noodles, or grilled vegetables.

Conclusion:

Grilled hoisin beef is a delicious and easy-to-make dish that is perfect for a summer cookout. The hoisin sauce marinade gives the beef a sweet and savory flavor, and the grilling process creates a slightly charred exterior and a tender interior. Serve grilled hoisin beef with your favorite sides for a complete meal.
