3 tablespoons apple cider vinegar
1 tablespoon packed light brown sugar
Kosher salt
1 15-ounce can black-eyed peas, drained and rinsed
1/4 small red onion, thinly sliced into rings
1 small head green cabbage, cut into 8 wedges
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 13-ounce package light kielbasa
1/2 cup fresh parsley
Spicy brown mustard, for serving

Steps:

  • Mix the vinegar, brown sugar, 2 tablespoons water and 1 1/4 teaspoons salt in a large bowl. Add the black-eyed peas and red onion, toss well and set aside to marinate.
  • Meanwhile, preheat a grill to medium. Brush the cabbage wedges all over with 2 tablespoons olive oil and season with salt and pepper. Grill the kielbasa and cabbage, turning halfway through, until charred and the cabbage is crisp-tender, 8 to 10 minutes.
  • Chop the cabbage into bite-size pieces and add to the black-eyed pea mixture. Stir in the parsley and remaining 1 tablespoon olive oil; season with salt and pepper and toss. Divide among plates. Slice the kielbasa and add to the plates. Serve with mustard.

2 rings (1 lb each) kielbasa sausage
12 wooden skewers (6 to 8 inch)
1/4 cup apricot preserves
2 tablespoons orange juice

Steps:

  • If using bamboo skewers, soak in water at least 30 minutes before using to prevent burning. Heat oven to 350°F. Line 15x10x1-inch pan with foil; spray with cooking spray.
  • Cut kielbasa at an angle into 48 chunks, about 1 inch each. On each skewer, thread 4 chunks of sausage; place in pan.
  • In small bowl, mix preserves and orange juice with fork; brush glaze over kabobs. Turn kabobs over; brush other side.

6 fresh basil leaves
8 ounces halloumi cheese, cut into cubes
½ cup balsamic vinegar
2 tablespoons honey
20 cherry tomatoes

1 lb kielbasa, cut into 24-30 pieces
18 whole mushrooms
1 large green bell pepper, cubed large
1 large zucchini, halved lengthwise and cut into 1-inch pieces
1 (16 ounce) can pineapple chunks (or fresh)
6 tablespoons olive oil or 6 tablespoons canola oil
3 1/2 teaspoons Dijon mustard or 3 1/2 teaspoons spicy brown mustard
1 teaspoon lemon juice
1 teaspoon soy sauce
salt and pepper

Steps:

  • Preheat grill or broiler to high.
  • Thread 8 12-inch skewers, alternating sausage and vegetables.

2 red bell peppers, halved lengthwise, seeds removed
1 bunch scallions
3 tablespoons vegetable oil
Kosher salt, freshly ground pepper
1/3 cup fresh lime juice
1 1/2 pounds kielbasa sausage, halved lengthwise
8 corn or flour tortillas
1/2 bunch cilantro
Hot sauce and lime wedges (for serving)

Steps:

  • Prepare a grill for medium-high heat. Toss onion, bell peppers, and scallions with oil on a rimmed baking sheet; season with salt and black pepper. Grill vegetables until lightly charred and tender, about 2 minutes for scallions and 10 minutes for onion and bell peppers. Transfer to a cutting board as they are done; let cool.
  • Slice onion into 1" wedges; place in a medium bowl and toss with lime juice. Remove skins from bell peppers, then cut into bite-size pieces; place in a small bowl. Place scallions on a platter.
