GRILLED LAMB CHOPS WITH MINT CHUTNEY
From The Best Recipes in the World by Mark Bittman. "You can make this easy mint chutney quite hot, and it still seems balanced, especially when served with a rich, flavorful meat like lamb. Heat comes in a wide variety of flavors, and what works best here is a bit of roasted fresh hananero (also called Scotch bonnet), the hottest chile you can find. But minced raw jalapeno or hot red pepper flakes are also good. No matter what you use, add a little at a time (I'd start with a quarter teaspoon if you're using habanero) and taste repeatedly, bearing in mind that the heat of chiles can "bloom" after a few minutes. Serve this with a neutral dish like plain rice, and perhaps a cooling salad."

Tips:
- Choose high-quality lamb chops. Look for chops that are a deep red color with a firm texture. Avoid chops that are brown or have a lot of white fat.
- Marinate the lamb chops before grilling. This will help to tenderize the meat and add flavor. You can use a variety of marinades, but a simple combination of olive oil, lemon juice, garlic, and herbs is a good place to start.
- Grill the lamb chops over high heat. This will help to create a nice crust on the outside of the meat while keeping the inside juicy.
- Use a meat thermometer to ensure that the lamb chops are cooked to your desired doneness. For medium-rare, cook the chops to an internal temperature of 135 degrees Fahrenheit. For medium, cook the chops to an internal temperature of 145 degrees Fahrenheit. For medium-well, cook the chops to an internal temperature of 155 degrees Fahrenheit.
- Let the lamb chops rest before serving. This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.
Conclusion:
Grilled lamb chops with mint chutney is a delicious and easy-to-make dish that is perfect for a summer cookout. The lamb chops are tender and juicy, and the mint chutney is a refreshing and flavorful accompaniment. This dish is sure to be a hit with your friends and family.
