There are many people, myself included, that think cooking prosciutto is basically a crime against nature; but there are exceptions, and this plate of grilled peaches with burrata is one incredibly delicious example. Serve as an appetizer or a sweet/savory dessert.

Categories     appetizer

Time 20m

Yield 4 servings

Number Of Ingredients 10

2 cups baby arugula
1 cup packed fresh parsley leaves
1/2 cup grated Parmesan
3 tablespoons pine nuts
1 small shallot, diced
Kosher salt and freshly ground black pepper
1/2 cup olive oil, plus more for drizzling

Canola oil, for brushing

Steps:

  • Combine the arugula, parsley, cheese, pine nuts, shallot and some salt and pepper in a food processor, and process until coarsely chopped. With the motor running, pour in the olive oil and blend until emulsified. The mixture should be slightly loose; if it is stiff, add a splash of water and process briefly to combine.

Flip over and continue grilling, covered, until soft, 3 or 4 minutes longer. Arrange the peaches cut-side up on a serving platter and drizzle with some olive oil. Spoon some pesto into the center of each peach half, then fold a piece of prosciutto and place it on the edge. Serve immediately.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 3

4 ripe peaches, cut in half skin on
1 tablespoon olive oil
1/3 lb sliced prosciutto

Steps:

  • Brush the cut side of the peach with oil and grill over medium coals, cut side down until grill marks develop, about 3 to 5 minutes.
  • Remove from grill.
  • Place on a plate with slices of prosciutto and grilled bread.

Tips:

  • Choose ripe but firm peaches for grilling. Overripe peaches will be too soft and fall apart on the grill.
  • To prevent the peaches from sticking to the grill, brush them with a little olive oil or melted butter before grilling.
  • Grill the peaches over medium heat, turning them occasionally, until they are slightly charred and softened. This will take about 5-7 minutes per side.
  • Once the peaches are grilled, remove them from the grill and let them cool slightly before slicing and serving.
  • Grilled peaches can be served with a variety of toppings, such as pecorino cheese, prosciutto, honey, or yogurt.

Conclusion:

Grilled peaches are a delicious and versatile summer dish. They can be served as an appetizer, main course, or dessert. With their sweet and smoky flavor, grilled peaches are sure to please everyone at your table.
