Steps:
- Preheat an outdoor grill for medium-high heat; lightly oil the grate.
- Cook the pineapple, red bell pepper, and jalapeno pepper on the preheated grill, turning frequently, until the pineapple has mild grill marks and the peppers are browned on all sides, about 3 minutes for pineapple and 5 to 7 minutes for peppers. Carefully remove from grill and place peppers in paper bag to cool.
- After peppers are cool, rub skins off gently with paper towels, cut in half, and remove and discard seeds. Cut the cooled pineapple and peppers into a small dice and place into a bowl. Add the mango, red onion, cilantro, lime juice, and lime zest; stir to combine. Cover the bowl with plastic wrap and refrigerate for 8 hours to 1 day before serving.

GRILLED SALMON WITH A PINEAPPLE, MANGO AND STRAWBERRY SALSA
Fresh Salmon is just the best. I go fishing in Alaska once a year and bring home a fair amount. Testing different peoples recipes is great. This one is from EMERIL. I keep some of his Essence on hand at all times. The fruit salsa is so refreshing and a great summer time addition to the fish. I have not tried it on other fish but I am sure it would be great.

Tips:
- Choose ripe fruits: Use ripe pineapple and mango for the best flavor. Look for fruits that are fragrant and have a slight give when pressed.
- Grill the fruits: Grilling the fruits adds a smoky flavor and caramelizes the natural sugars. You can grill the fruits over charcoal or gas, or in a grill pan.
- Use fresh herbs: Fresh herbs, such as cilantro and mint, add a refreshing flavor to the salsa. Use a variety of herbs to create a complex flavor profile.
- Add a touch of heat: If you like spicy salsa, add a jalapeño pepper or a serrano pepper to the mix. Remove the seeds and ribs from the pepper before chopping it to control the heat level.
- Adjust the sweetness: If the salsa is too tart, add a little honey or agave nectar. If it's too sweet, add a squeeze of lime juice.
Conclusion:
Grilled pineapple mango salsa is a delicious and versatile condiment that can be used on tacos, burritos, fish, chicken, or pork. It's also great as a dip for chips or vegetables. With its vibrant colors and sweet and smoky flavor, this salsa is sure to be a hit at your next party or gathering.
