Yield 4

Number Of Ingredients 6

1 (8 ounce) can pineapple rings, juice drained and reserved
¼ cup brown sugar
¼ cup soy sauce
¼ teaspoon garlic powder
4 pork chops
1 pinch ground black pepper

Steps:

  • Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. Place the pork chops into the marinade, squeeze out any air in the bag, seal it, and refrigerate overnight. Reserve the pineapple rings.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the chops from the marinade, shaking off excess, and grill until browned, the meat is no longer pink inside, and the meat shows good grill marks, 5 to 8 minutes per side. Brush several times with marinade and let the marinade cook onto the surface of the meat. Discard excess marinade. While the meat is grilling, place 4 pineapple rings onto the grill, and allow to cook until hot and the slices show grill marks; serve the chops topped with the grilled pineapple rings.

GRILLED PORK CHOPS WITH PINEAPPLE-TURMERIC GLAZE

Grilled Pork Chops with Pineapple-Turmeric Glaze image

For this grilled pork chop recipe, don't be afraid of getting a good char. It just means the sugars in the glaze are caramelizing (not that the meat is burning), resulting in deep, complex flavor.

Yield 4 servings

Number Of Ingredients 10

Vegetable oil (for grill)
1/2 cup pineapple juice (from a can)
1/4 cup honey
1/4 cup unseasoned rice vinegar
3 Tbsp. Dijon mustard
1 tsp. crushed red pepper flakes
1/2 tsp. toasted sesame oil
1/2 tsp. ground turmeric
4 (1"-thick) bone-in pork chops
Kosher salt

Steps:

  • Prepare a grill for high indirect heat (for a gas grill, leave one or two burners off; for a charcoal grill, bank coals on one side); oil grate. Bring pineapple juice, honey, vinegar, mustard, red pepper flakes, sesame oil, and turmeric to a simmer in a small saucepan over medium heat and cook, swirling occasionally, until reduced to 3/4 cup, 10-15 minutes. Let cool. Transfer half of sauce to a small bowl and set aside for serving.
  • Season pork with salt. Grill over direct heat until browned all over, about 3 minutes per side. Continue to grill, turning several times and basting with remaining sauce, until charred and coated with a thick layer of glaze, about 4 minutes. Move to cooler part of grill and take internal temperature of pork. If needed, continue grilling over indirect heat until an instant-read thermometer inserted into chops near bone registers 130°F, 1-4 minutes more. Transfer pork chops to a wire rack and let rest 10 minutes before slicing. Serve with reserved sauce alongside.

GINGER-SESAME PORK CHOPS WITH GRILLED PINEAPPLE RECIPE

Ginger-Sesame Pork Chops with Grilled Pineapple Recipe image

Provided by thatjerseygirl

Number Of Ingredients 14

1/4 cup fresh lime juice (from 1 to 2 limes)
1/4 cup Asian sesame oil
1/4 cup less-sodium soy sauce
3 Tbs. grated fresh ginger (from a 5-inch knob)
2 Tbs. fresh orange juice
2 Tbs. rice vinegar
2 Tbs. extra-virgin olive oil
1 Tbs. dark brown sugar
1/2 tsp. finely grated orange zest
Six 3/4-inch-thick boneless center-cut pork loin chops (about 6 oz. each), trimmed of excess fat
1 ripe golden pineapple, peeled, cut into 1/2-inch-thick rings, and cored
1 bunch scallions, trimmed and cleaned
Vegetable oil for the grill
Kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, combine the lime juice, sesame oil, soy sauce, ginger, orange juice, vinegar, olive oil, sugar, and orange zest. Arrange the pork in a 9x13-inch dish and pour 1/2 cup of the marinade over the meat. Add the pineapple rings and scallions to the remaining marinade and toss. Marinate everthing in the refrigerator for 30 to 45 minutes, turning the ingredients occasionally. Meanwhile, prepare a medium charcoal or gas grill fire. Brush the grill grate clean. Remove the pork, pineapple, and scallions from their marinades. Season the pork lightly on both sides with salt and pepper. Grill, covered, until the pork is just barely cooked through, 3 to 4 minutes per side, and the pineapple and scallions are warmed through and grill-marked, 2 to 3 minutes per side for the pineapple and 1 to 2 minutes per side for the scallions. As each item finishes cooking, transfer it to a serving platter. If your grill isn't big enough to fit everything at once, grill the scallions last.

Tips:

  • To select the best pork chops, look for those that are at least 1 inch thick and have a good amount of marbling.
  • If you don't have a grill, you can also cook the pork chops in a grill pan over medium heat.
  • If you want to add more flavor to the pork chops, you can marinate them in a mixture of olive oil, garlic, herbs, and spices for at least 30 minutes before grilling.
  • Be sure to preheat your grill to medium-high heat before cooking the pork chops. This will help to prevent them from sticking to the grill grates.
  • Cook the pork chops for 6-8 minutes per side, or until they reach an internal temperature of 145 degrees Fahrenheit.
  • Let the pork chops rest for a few minutes before serving. This will help the juices to redistribute and make the meat more tender.

Conclusion:

Grilled pineapple pork chops are a delicious and easy-to-make meal that is perfect for a summer cookout. The combination of sweet pineapple and savory pork is sure to please everyone at the table. You can also serve roasted vegetables, rice, or pasta with pork chops to complete the meal.
