GRILLED PINEAPPLE WITH BROWN SUGAR, COCONUT, AND RUM

Grilled Pineapple with Brown Sugar, Coconut, and Rum image

Yield Makes 4 servings

Number Of Ingredients 7

1/2 cup sweetened flaked coconut
1 (3 1/2-to 4-pounds) pineapple, peeled
1/2 cup packed dark brown sugar
1/4 cup dark rum
2 teaspoons curry powder (preferably Madras)
1 tablespoon fresh lime juice
Accompaniment: vanilla ice cream

Steps:

  • Toast coconut in a small heavy skillet over medium heat, stirring frequently, until golden-brown, about 5 minutes.
  • Cut pineapple crosswise into 8 slices (about 3/4 inch thick) and core slices. Stir together remaining ingredients in a shallow glass baking dish and add pineapple in 1 layer, turning to coat evenly. Marinate, turning occasionally, 30 minutes.
  • Prepare a gas grill for direct-heat cooking over medium-high heat; see Grilling Procedure .
  • Oil grill rack. Grill pineapple (reserve marinade), covered, turning once, until grill marks appear and pineapple is heated through, about 4 minutes. Serve pineapple with marinade and sprinkle with toasted coconut.

Tips:

  • Choose ripe pineapples for the best flavor. A ripe pineapple will have a golden yellow color and a sweet aroma.
  • To easily remove the pineapple skin, use a sharp knife to cut off the top and bottom of the pineapple. Then, score the skin from top to bottom, following the natural curve of the pineapple. Use a spoon to scoop out the flesh, following the score marks.
  • If you don't have a grill, you can also cook the pineapple slices in a grill pan over medium heat.
  • To make the coconut sorbet, it's best to use a food processor or blender with a frozen fruit setting. If your appliance doesn't have this setting, you can freeze the coconut milk mixture in ice cube trays and then blend the frozen cubes until smooth.
  • Serve the grilled pineapple with coconut sorbet immediately. You can also drizzle the pineapple with honey or agave syrup for extra sweetness.

Conclusion:

Grilled pineapple with coconut sorbet is a delicious and refreshing dessert that's perfect for summer. The pineapple is grilled to perfection, giving it a slightly caramelized flavor. The coconut sorbet is creamy and refreshing, and it pairs perfectly with the grilled pineapple. This dessert is sure to be a hit at your next party or barbecue.
