GRILLED SHRIMP SKEWERS

Grilled Shrimp Skewers image

Categories     appetizer

Time 32m

Yield 4 servings

Number Of Ingredients 7

1/2 cup olive oil
3 cloves garlic, crushed
1 tablespoon Calabrian chile flakes
1 tablespoon fresh oregano leaves, plus for garnish
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 pound extra-large (16 to 20 per pound) shrimp, shelled and deveined, tail-on

Steps:

  • Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
  • Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.

GRILLED LAMB ON ROSEMARY SKEWERS

Grilled Lamb on Rosemary Skewers image

Lamb on rosemary skewers has to be one of the oldest recipes in the world. In ancient times, the meat could just as easily have been goat, or something wilder, and fish was no doubt also a candidate. The idea of cutting branches of rosemary and using them as skewers must certainly have occurred to humans soon after they figured out how to build fires. You want rosemary branches with woody stalks, if possible. But if the stalks are too flimsy to poke through the lamb, run a pilot hole through with a skewer, and be sure to grill the lamb and figs separately because they'll cook at different rates. You might throw together a little basting sauce of lemon, garlic and a little more rosemary, but the skewers are just fine without it, and have been for thousands of years.

Categories     dinner, lunch, skewers and kebabs, main course

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 8

2 pounds boneless lamb shoulder, cut into chunks
10 to 20 fresh figs
Rosemary branches
1/4 cup extra virgin olive oil, more or less
Salt and freshly ground black pepper to taste
1/2 cup freshly squeezed lemon juice
2 cloves garlic, roughly chopped
1 tablespoon minced fresh rosemary

Steps:

  • Start a charcoal or wood fire or heat a gas grill; fire should be moderately hot. Thread lamb and figs onto rosemary branches, three or four chunks or figs per skewer. Do not mix meat and figs on same skewer.
  • Brush lightly with olive oil and season with salt and pepper. Mix together the lemon juice, garlic and minced rosemary and brush a little of this mixture on lamb and figs.
  • Grill, turning skewers as each side browns and taking care to avoid flare-ups; total cooking time should be from 6 to 10 minutes for medium-rare meat, and 4 or 5 minutes for the figs. Meat will become slightly more done after you remove it from grill, so take this into account.

GRILLED ROSEMARY GARLIC SHRIMP

Grilled Rosemary Garlic Shrimp image

I believe this is a variation of a recipe from Gourmet. It's an awesome dish that can be used as an appetizer OR main course. The key is using fresh rosemary and lots of garlic. You can increase the amount of garlic if you wish. The only negative is peeling the shrimp which can be a bit messy but it is worth it!

Tips:

  • Choose fresh, large shrimp: Look for shrimp that are firm and have a slight briny smell. Avoid shrimp that are mushy or have a strong fishy odor.
  • Prepare the marinade: The marinade helps to infuse the shrimp with flavor and keeps them moist during grilling. Use a combination of olive oil, lemon juice, garlic, herbs, and spices to create a flavorful marinade.
  • Skewer the shrimp: Use metal or wooden skewers to skewer the shrimp. If using wooden skewers, soak them in water for at least 30 minutes before using to prevent them from burning.
  • Grill the shrimp: Preheat your grill to medium-high heat. Grill the shrimp skewers for 2-3 minutes per side, or until they are cooked through and slightly charred.
  • Serve immediately: Grilled rosemary shrimp skewers are best served immediately with a squeeze of lemon juice and a sprinkling of fresh herbs.

Conclusion:

Grilled rosemary shrimp skewers are a quick, easy, and delicious seafood dish that is perfect for summer grilling. The shrimp are marinated in a flavorful mixture of olive oil, lemon juice, garlic, herbs, and spices, then grilled until cooked through and slightly charred. Serve the shrimp skewers immediately with a squeeze of lemon juice and a sprinkling of fresh herbs. They are a great addition to any summer party or cookout.
